A Moving Tribute

Today is the five year anniversary of the 35W bridge collapse in Minneapolis, Minnesota.  As a tribute to those 13 people who lost their lives on August 1 and the survivors Minnesota poet, Todd Boss, wrote a series of 35 poems called "Fragments of the 35 W Bridge".  All 35 poems are printed in the Star Tribune as well a link within the article to an audio version. Follow the link below to read the poems. 
What a meaningful way to honor those who lost their lives and to those survivors of the bridge collapse.

My tomato plants are going crazy. They really like this warm, sultry, weather. Its hard to believe that these three plants potted in May were only some 20 inches high. I have been looking for ways to use the bumper crop. The following recipe was perfect for a light summer meal.
Tomato-Watermelon Salad

Ingredients:Salad
  • 3 cups cubed watermelon-drained on a paper towel
  • 1 cup cherry tomatoes halved-drained on a paper towel
  • 1 cup cubed cucumber
  • 1 small red onion cut into rings
  • 1/2 bag of spinach leaves
  • 1 cup blueberries rinsed and drained
  • options feta or Swiss or Gorgonzola cheese and chopped fresh basil

Dressing: Original recipe
Cook's notes: I put in the original dressing recipe but was not sure if red wine vinegar would be too tart so I added some other dressing options 
  • 1/2 cup balsamic vinegar  or red wine vinegar
  • 1/4 cup extra light olive oil
  • Options: I used a strawberry balsamic dressing which I really liked but vidalia onion poppyseed dressing would work as well as a raspberry vinaigrette
Directions:
  • Mix watermelon, cucumbers, tomatoes, onions, blueberries in a large bowl
  • Over the mixture sprinkle 1 tsp. sugar, 1/4 tsp. salt and blend
  • Chill 15 minutes and drain 
  • Make dressing in blender and chill or use a prepared dressing of choice
  • Place tomato-watermelon mixture on spinach leaves
  • Add cubed cheese
  • Drizzle dressing on top
I thought this recipe below looked quite spectacular in the picture if you just happen to need  an idea for entertaining.

  1. Todd is one of my favorite contemporary poets. It's especially wonderful to see a writer of his talent recognized. Love his poetry books and his work on motion poems.

    Wow, your tomatoes look great. The leaves on mine are curling and drying up. But they're producing, for now, anyway. I would not think of combining tomatoes with watermelon or blueberries. Sounds like a recipe I should try.
