Cucumber and Sugar Snap Salad

Cucumber and Sugar Snap Salad
recipe adapted from Southern Living August 2013

Cook's notes: This salad has lots of options since almost any veggies will do. Try bell peppers, jicama or fresh corn kernels.
I found snap peas crisp up well if put in a zip loc bag overnight with a little bit of water .
Ingredients for salad:
  • 1 cup sugar snap peas 
  • 1 cup diced cucumber
  • 6-8 radishes cut into thin strips
  • 1/4 cup red onion
  • 2 celery ribs 
  • 1-2 cups from a bag of Fresh Express Veggie Lover Salad Mix  
  • 1 oz. feta cheese, crumbled 
Directions:
  • Mix in a large bowl
Ingredients for dressing:
  • 1/4 cup plain Greek yogurt 
  • 1/4 cup lite sour cream
  • 1 garlic clove minced
  • 1TB. chopped fresh mint
  • 1 tsp. dill seed
  • 1 tsp. parsley flakes
  • 1/2 tsp. celery seeds 
  • salt and pepper to taste 
Directions:
  • Mix all ingredients and chill for 1-2 hours
  • Just before serving mix dressing with salad ingredients-use only enough dressing to moisten salad
  • Sprinkle a dash of dill on salad right before serving
