Baileys' Irish Cream Pound Cake

Baileys' Irish Cream is an Irish whiskey and cream based liqueur made by Gilbeys of Ireland.
Baileys' is the biggest selling spirit brand at Christmas in the United States. Canada and the United States rate as two of the 10 ten market places for this liqueur. If you are a fan of Baileys' than this dessert is made just for you.
Baileys' Irish Cream Pound Cake
Cook's notes: This cake is loaded with flavor and very moist. The only thing missing from this picture is a drizzle of the icing over the cake slices as suggested in the recipe. But my guests skipped that part and just ate the leftover icing from the bowl-it was that good!!!  
The recipe was pretty straightforward to make. It called for adding mini chocolate chips but I would suggest eliminating them.  The chips sunk to the bottom of the batter and took away from the overall taste.   
Loaf Ingredients:
  • 1/2 cup butter
  • 3 eggs
  • 1/4 cup sour cream
  • 1/4 cup Baileys' Irish Cream
  • 1-1/2 cups flour
  • 1/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1 cup sugar
  • optional 1 cup mini chocolate chips
Glaze Ingredients:
  • 1 cup powdered sugar
  • 3 TB. Baileys' Irish Cream (may need more to reach icing desired consistency)
  • 1 TB. cocoa powder 
Loaf Directions:
  • Preheat oven to 325 and grease well a loaf pan well
  • Combine flour, baking powder, baking soda and set aside
  • In a mixing bowl beat butter about 30 seconds, gradually add in sugar and beat about 5 minutes until light and fluffy
  • Add in eggs one at a time and mix well
  • In another bowl combine sour cream and Bailey's, stir well to mix
  • Alternate the flour mixture with the sour cream mixture and the butter mixture, beating after each addition just until combined
  • Stir in chocolate chips if adding them
  • Bake 50-55 minutes
  • Cool in pan 10 minutes and invert to a wire rack 
Glaze Directions:
  • Use a whisk and blend all ingredients until smooth
  • Drizzle icing over cooled loaf or drizzle icing over each slice



Porch sitting is an integral part of the Southern lifestyle. Walk through any Southern neighborhood, and you’ll see people sitting on their porches, waving genially at passersby. Rocking chairs are often involved, and people think nothing of shouting entire conversations to their neighbors across the street so both parties can continue porch sitting.  And don't forget a glass of sweet tea. Life doesn't get any better than this.

    Ah, porches. Love them and wish I had one.
