A Devilish Spin

Revisiting Deviled Eggs
March 3, 2014 I posted A Southern Classic Deviled Eggs with a Surprising Twist. The popularity of deviled egg platters here in the south abounds once you start looking for them. But when I saw this platter online I knew this was the one. It would be perfect for any of these these devilish spins.
Start with this basic classic deviled egg recipe and 'spin' out from there.
Basic Deviled Egg Recipe
Ingredients:
  • 1 dozen hard boiled eggs
  • 2 TB. onions minced 
  • 2 tsp. Dijon mustard
  • 1/3 cup mayonnaise  
  • salt and pepper to taste
optional 2 TB. pickle relish-I have found that there is a lot discussion amongst southern cooks regarding the addition of pickle relish :)
Directions:
  • Hard boil eggs and peel
  • Mash yolks with onions, mustard and mayonnaise
Deviled Eggs with Old Bay Shrimp

Ingredients:
  • 24 rock or bay shrimp
  • 1 dozen hard boiled eggs
  • 1/2 cup mayonnaise
  • 2 TB. dill pickle juice 
  •  1 tsp. Old Bay Seasoning
  •  1/4 tsp. salt
  • sprigs of fresh dill
Directions:
  • In a food processor add yolks, pickle juice, mayonnaise, salt and Old Bay Seasoning
  • Distribute filling between egg whites
  • Sprinkle each egg with a pinch of Old Bay Seasoning or smoked paprika
  • Top with shrimp and a sprig of fresh dill    
The following recipes are from Southern Living April 2014
Country Ham-Breadcrumbs
Directions: Prepare basic deviled egg recipe above and stir into yolk mixture; 1/2 cup chopped country ham and 1/3 cup chopped Swiss cheese. Top with toasted bread crumbs.
Smoked Salmon, Lemon and Caper
Directions:
Prepare basic deviled egg recipe above and stir into yolk mixture; 1-1/2 TB. capers, 3/4 tsp. lemon zest, 3 tsp. lemon juice, 1/4 tsp.black pepper, 1/8 tsp. salt. Top with bits of smoked salmon.
Avocado-Tarragon
Directions: Prepare basic deviled egg recipe above and stir into yolk mixture; 4 TB. prepared avocado mixture (dairy section), 3 tsp. lime juice, 1 tsp. dried tarragon, add salt and pepper to taste.
Spinach-Poppyseed and Bacon
Directions: Prepare basic deviled egg recipe and stir into yolk mixture; 1/2 cup frozen spinach thawed and squeezed dry, 4-5 tsp. red onion, minced and 4-1/2 tsp. prepared poppy-seed dressing. Top with bacon bits.

Pesto Crunch

Directions: Slice 8 hard boiled eggs lengthwise. Mash yolks with 1/4 cup mayonnaise, 1/3 cup prepared pesto,salt and pepper to taste. In a fry pan melt 1 TB. butter, stir fry 1/3 cup seasoned bread crumbs until golden.    
  
 
Beet Pickled Deviled Eggs
Directions:Combine 1(15 oz.) can sliced beets, 3/4 cup white vinegar,1/4 cup sugar,1/2 cup water, and 3/4 tsp. salt. Simmer until sugar dissolves. Let cool. Pour beet mixture over 8 peeled, whole hard- boiled eggs in a bowl. Refrigerate at least 8 hours. Drain and dry eggs;cut in half lengthwise and fill.
