Healthy Lunch Ideas

Perhaps this may be a record setting year for latest date for lake freeze up ever. Looks like the window of time for ice fishing may be quite short this season. Lucky for me not my sport. Enjoy some of these healthy lunch options for a wintry day. Pair the meal with your favorite bowl of soup.

  Cheesy Spinach Laughing Cow Panini
Cook's notes: This recipe has few ingredients and comes in at 185 calories for one serving as shown in above photo.
All you need is 
one Mini Babybel Light Cheese(Laughing Cow or another similar product), tablespoon or two of pizza sauce, spinach or another favorite pizza topping and a whole wheat muffin.
Use a panini maker or a George Foreman small grill to create a warm, gooey pizza sandwich.

Stopping by Woods on a Snowy Evening

Whose woods these are I think I know.
His house is in the village though;
He will not see me stopping here
To watch his woods fill up with snow.

My little horse must think it queer
To stop without a farmhouse near
Between the woods and frozen lake
The darkest evening of the year.

He gives his harness bells a shake

The only other sound’s the sweep
