The World According to Bella

Coastline Drive
Mrs. S looked like she needed to get out of the house. So Mr. C and I planned an easy driving trip along the coastline. We figured she could handle that much. We were lucky to spot a white Ibis real close to the house. I've been told they like to hang out mostly in shallow coastal marshes, wetlands and mangrove swamps. Their diet is small aquatic prey such as crayfish and small insects. I can get quite excitable when I see any kind of bird. Often Mr. C and Mrs S. are warning to be quiet since my barking scares them away. So I was on my best behavior for this photo.
Check out these wind-swept oaks we saw today. What a strange sight. All these trees leaning into the homes often touching their roofs and windows wouldn't you think they'd cut them down. Maybe there is some law against it???

As some would say Texans likes things big! Every where we go big and I mean really BIG RVs in trailer parks and along the beach. One RV was so big it needed 3 axles and 3 sets of wheels!  We just couldn't believe a truck this size could move it. 


But our favorite was this one. Looked real cozy!
We had a fun afternoon exploring. And I even got to go on another beach (but on a leash).

Broccoli Cornbread
Side Dish
Adapted from Southern Living December 2011
Cook's note: I added bits ham and used the dish as a main meal. The batter will be a bit dry but bakes just fine.
Ingredients:
  • 1 package or box of corn muffin mix
  • 1-10oz. package frozen chopped broccoli or use fresh
  • 3 large eggs, slightly beaten
  • 1 cup creamed cottage cheese drained
  • 1/2 tsp. salt
  • ½ cup melted butter or margarine
  • 1 small onion chopped
  • 1 small can of chiles drained and chopped
  • 2 cups grated cheddar cheese
  • optional: chopped bits of ham to make it as a main meal
Directions:
  • Grease a 13 x 9 pan
  • Pat broccoli dry with a paper towel
  • Stir together eggs, cottage cheese and salt
  • Add muffin mix, butter, onions, chiles and broccoli
  • Stir just till blended
  • Bake @ 400 check at 25 minutes
