Salmon Kabobs

The to be read pile just never goes down!
Just as I finish one book, in comes another requested one from the library. And often the distractions of life stand in my way of paring down those stacks of books waiting to be read. This book came highly recommended and I was not disappointed. The drama of the Charles Lindbergh family has always intrigued me and  I really did not know much about Charles's wife Anne Morrow. Plus many years ago, I heard Reeve Lindbergh speak at a conference. She is the youngest daughter of Charles and Anne Morrow. She is an accomplished poet, author and chairman of the Charles and Anne Morrow Foundation.
What I found remarkable about this story is learning how one woman managed to triumph over hardships and personal struggles to come out of living under her husband's shadow, successfully raise five children and along the way find her own literary voice.
This book is historical fiction and written in the first person as Anne. She depicts her life marrying a hero and living under the scrutiny of the public. The book reads almost like a memoir but as the reader we need to keep reminding ourselves it is a novel and perhaps not all the details are real since it is what the author often imagined what Anne thought. Anne's marriage to Charles had many highs and lows. During their marriage she was swept up in her husband's dark side of his being an isolationist and his anti-semitic feelings. And then there was the devastating loss of a child early in their marriage.  Anne Morrow's husband's accomplishments often overshadowed hers since she was an accomplished aviator and writer. She is best known for her literary work Gift From The Sea.
It is evident this book is well researched and documented.  A good book to add to your reading list :)

With the late spring start my grill has not gotten its usual workout. This is an easy recipe that gives you more time for outdoor activities.
Salmon Kabobs
Ingredients:
  • salmon fillets cut in large chunks
  • chunks of peppers
  • red onion chunks
  • chunks of cut tomatoes
  • 1 lime
  • asparagus spears
  • optional chunks of cucumbers 
  • Old bay Seasoning
  • Dill

Directions:
Old Bay Seasoning is a blend of spices and herbs perfect for seafood

  • Use the juice of one small lime and pour over salmon fillet-rub in 1-2 tsp. Old Bay Seasoning
  • Cut salmon in chunks and place in a zip loc bag
  • Marinate in refrigerator 2 hours
  • Soak skewers in water for one hour
  • Drain salmon and thread on skewers alternating with cut vegetables
  • Sprinkle with dill and grill 
  • Serve over with brown rice
