Acorn Cookies

How easy is this...these no-bake cookies are made with a Hershey Kiss, canned frosting, mini vanilla wafer and butterscotch peanut butter chip. The frosting is used like a glue to adhere cookie, chip and wafer together.

This link is a great resource for pumpkin related crafts and food projects. I loved how creative this idea is repurposing a bundt pan.

Mini 7 Layer Dips

Cook's notes: A new twist on the traditional Seven Layer Dip recipe from General Mills- It would be a great addition for your next football party    

Ingredients: 

• 1 can (16 oz.) refried beans
• 2 TB. taco seasoning mix
• 1 container low fat sour cream (8 oz.)
• 1 can (4.5 oz.) chopped green chiles
• 1-1/4 cups guacamole
• 1-1/4 chunky salsa
• 1 cup shredded Cheddar cheese  
• 1 cup shredded lettuce
• 2 Tb. ripe olives

Directions:

• In a small bowl mix refried beans and 2 TB taco seasoning mix
• Spread 3 TB. of mixture in the bottom of 8- 9 oz. plastic cups
• Mix sour cream and chiles-divide among the cups (about 2 TB.)
• Top each cup with 2 TB.  each guacamole and salsa 
• Add cheese and lettuce and olives in each cup
• Serve with a spoon and chips

So I saved the best news to last. I recently got a small part time job writing a food column for a local up north Minnesota newspaper twice a month. The first column will be published in early October. I will post a link at that time when it happens. I was thinking of starting with a Minnesota staple wild rice and posting my Wild Rice Soup recipe. But I am stuck on a clever name for a recipe column that would have a woodsy up north type name. I am open for ideas and there is a prize if the name you submit is picked.
