A Wee Bit of Irish

Baileys' Irish Cream Pound Cake 
Cook's notes: This cake is moist and with the added Baileys' Irish Cream and buttery pound cake flavor it's perfect for a March treat. A straightforward recipe and easy to put together. The frosting is so good you just might want to lick the bowl.

Cake Ingredients:

  • 1/2 cup butter 
  • 3 eggs 
  • 1/4 cup sour cream 
  • 1/4 cup Baileys' Irish Cream 
  • 1-1/2 cups flour 
  • 1/4 tsp. baking powder 
  • 1/8 tsp. baking soda 
  • 1 cup sugar 
Icing Ingredients:
1 cup powdered sugar
3 TB. Baileys' Irish Cream (may need more to reach icing desired consistency)
1 TB. cocoa powder
Cake Directions:
  • Preheat oven to 325 degrees. Grease a loaf pan or 8 x 8 glass pan. 
  • Combine flour, baking powder, baking soda and set aside. 
  • In a mixing bowl beat butter about 30 seconds, gradually add in sugar and beat about 4 minutes until light and fluffy. 
  • Add in eggs one at a time and mix well. 
  • In another bowl combine sour cream and Baileys'. Whisk to mix. 
  • Alternate the flour mixture with the sour cream mixture and the butter mixture, beating after each addition just until combined. 
  • Bake in a loaf pan 35-40 minutes, 8 x 8 pan 28 minutes or until center comes clean using a toothpick. 
  • Cool in loaf pan 10 minutes and invert to a wire rack. If using a 8 x 8 pan no need to invert.  
Icing Directions:
  • Use a whisk and blend all ingredients until smooth.  
  • Drizzle icing over cooled loaf/cake or over each slice.

  • your printer for tags (I had to decrease the size by 50%)
  • a trip to the dollar store for small containers with covers (4 in a package for $1.00) it's your pots of gold
  • a trip to Michaels or JoAnn-twine 
  • a trip to a local drugstore-Mini Reeses Peanut Butter Cups and Air Nerds Xtremes (rainbow colored candy)
