Sheet Pan Blackberry Hoisin Chicken with Roasted Vegetables

with a sheet pan Asian flair dinner Blackberry Hoisin Chicken.  It's juicy chicken  smothered in the most amazing tangy, sweet and spicy sauce served with crispy baked vegetables.  A meal made all in one pan. 
Cook's Notes: Recipe serves four and was adapted from carlsbadcravings.com 
The sauce can be made early in the day before serving as a timesaver. Reheat on low. Marinating chicken for an hour in 1 cup buttermilk tenderizes the meat. Drain the meat in a colander before proceeding with recipe. Jasmine rice is the perfect pairing with this chicken dish.  
Ingredients:
  • 4 chicken tenders, skinless breasts 
  • 2-3 cups Brussels sprouts, outer skins removed and sliced in half
  • 2-3 cups sweet potatoes or butternut squash, sliced and quartered 
  • 2 TB. olive oil
  • 2 TB. pure maple syrup
  • 1 cup red onion, cut in strips  
  • Saigon cinnamon, sprinkle 
  • Salt and pepper to taste 
Blackberry Hoisin Sauce Ingredients:
  • 1/2 cup seedless blackberry preserves
  • 1/4 cup hoisin sauce
  • 2 TB. red wine vinegar
  • 1 tsp. Asian chile sauce 
  • 1 tsp. Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 tsp. dried ginger or 1 tsp. freshly grated ginger 
  • 1/4 cup water mixed with 2 tsp. cornstarch 
  • Garnish with fresh blackberries 
Directions:
  • In a small saucepan add all the Blackberry Hoisin Sauce ingredients except fresh blackberries. Cook on low heat until slightly thick and set aside. 
  • Line a baking sheet with parchment paper or a silicone pad.  
  • Preheat oven to 400 degrees. 
  • In a bowl add sliced sweet potatoes with cut and trimmed Brussels sprouts. Toss with olive oil and maple syrup.Spread out evenly on baking sheet and sprinkle with Saigon cinnamon. Roast for 20 minutes until fork tender. Remove and keep warm on a  plate covered with foil. Add chicken to the baking sheet with red onions and drizzle with some of the blackberry sauce over it. Cover baking sheet with foil and cook 30 minutes or until chicken is done.
  • To serve add more sauce over the chicken with fresh blackberries and a sprinkle of sesame seeds as a garnish.
