Peach Almond Tartlets

The big question is how long will they be available before the stores run out? 
Tarts. The French word tarte can be translated to mean either pie or tart, as both are mainly the same. The big difference is that a pie usually has pastry covering the filling. A tartlet is a miniature tart.

Peach Almond Tartlets with a Twist
Ingredients:
  • 1 sheet 1/2 lb puff pastry (I used Pepperidge Farm)
  • 1 egg beaten well with a fork
  • 2 large or 3 medium size peaches
  • 2 TB. brown sugar
  • 1-1/2 TB. all-purpose flour
  • 1 tsp. cinnamon
  • 1/2 tsp. vanilla
  • 1/4 cup sliced almonds
  • 1/2 cup powdered sugar
  • 1/2 tsp almond extract
  • 1 TB. milk or add to achieve desired consistency
Directions:
  • Preheat oven to 400 degrees. Thaw pastry 20 minutes at room temp, or until you can unfold the pastry. Cut into 9 equal sized squares and place on parchment lined baking sheet, spacing 1-inch apart.
  • Beat 1 egg in a small bowl and set aside.
  • Dice peaches and place in a medium mixing bowl. Sprinkle with sugar, flour, cinnamon, vanilla and gently fold together using a rubber spatula.
  • In the the center of each pastry square place a tablespoon of peaches using a slotted spoon to drain extra juices.  Avoid getting peach juice on pastry edges. Sprinkle with sliced almonds.  
  • Bring each corner (diagonally) to center and pinch. Try not to overfill as filling will ooze out a little.
  • Brush pastry with egg wash.
  • Bake on the center oven rack for 17-18 minutes or until puffed and golden at the edges. Note: Do not over-bake. It browns quickly towards the end. Remove from oven and let cool on the pan for 5 minutes.
  • While pastry cools, make the glaze: in a measuring cup, stir together powdered sugar, almond extract and milk by as needed to reach desired consistency then drizzle glaze  the warm pastries.
Cooking Tip: Do not use microwave to reheat as the tartlets can get soggy. For a warm-up toast tartlets on a baking sheet for 4 minutes at 400 degrees.
