Kid Friendly One Skillet Ravoli with Beef, Spinach and Cheese

Cook's Notes: Recipe adapted from Southern Living and serves 6
Ravoli can be found in refrigerated section, a Buitoni product was used. Substitute ground turkey or chicken for the beef, or replace the spinach with bok choy. 
Ingredients: 
  • 1 pound 85% lean ground beef
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium-size onion, thinly sliced (about 1-1/2 cups)
  • 2 tablespoons finely chopped garlic (from 3 medium garlic cloves)
  • 1 (28-oz.) can crushed tomatoes (fire roasted or basil, garlic onion)
  • 2 cups chicken stock, low sodium
  • 1 teaspoon each dried Italian seasoning and parsley flakes
  • 1 teaspoon sugar
  • 1 (20-oz.) pkg. refrigerated four-cheese ravioli (such as Buitoni)
  • 3/4 of a (5-oz.) pkg. baby spinach
  • 1 package three cheeses ( 8 oz.) 
  • 2 ounces grated Parmesan cheese (about 1⁄2 cup)
  • Optional: 1/4 cup torn fresh basil leaves
Directions;
  • In a large skillet heat 1 tablespoon olive oil, brown meat sprinkle with salt and pepper on a medium low heat. Crumble meat, remove from pan and wipe any grease with a paper  towel to clean.   
  • In a large skillet heat rest of oil. Add in onions and garlic, saute about 6 minutes.  
  • Stir in crushed tomatoes, chicken stock, Italian seasoning, sugar and ravioli. Bring to a boil, reduce heat to medium low. Cover and simmer until ravioli are tender, about 8 minutes. Uncover and return cooked beef to skillet. Stir in half of spinach, and cook just until wilted. Repeat with remaining spinach. Top with cheeses stir until melted. Grate Parmesan cheese and serve.
YUM! YUM! Cheesy Goodness in every bite
Cooking Tip: to serve 3-4  I made the following adaptations to the recipe and kept the rest of the ingredients the same. 
3/4 lb. ground beef
1 can crushed tomatoes (14.5 oz. can)
1/2 package of refrigerated ravoli 
1/2 package of 3 cheeses 
1-1/4 cups chicken broth
