Banana Oat Chocolate Chip Snack Cake

 TIME FOR A BREAK  
and it's served with a delicious piece of Banana Oat Chocolate Chip Snack Cake 
Cook's Notes: This Banana Oat Chocolate Chip Snack Cake is incredible! An easy one-bowl wonder, light, fluffy, moist and so delicious! Part of what makes this banana oat snack cake so special is the simple streusel that adorns the top. This banana oat snack cake is snack worthy for any occasion coffee time or tea time or dessert for dinner. Do yourself the favor of immediately reserving some bananas to hang out until properly spotted and then immediately make this cake. You will not regret it.
The recipe is adapted from Mel's Kitchen
Cake Ingredients:
  • ½ cup butter softened (I use salted)
  • ½ cup packed light or dark brown sugar
  • 1 cup very ripe, mashed bananas (about 3 medium bananas)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups old-fashioned, rolled oats not quick oats 
  • ¾ cup all-purpose or 1/2 cup all-purpose and 1/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon Saigon cinnamon or 2 teaspoons ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3/4-1 cup mini chocolate chips (depends on how much chocolate you like) 
Streusel Ingredients: 
  • ½ cup of old-fashioned rolled oats
  • ½ cup sweetened or unsweetened coconut flakes
  • ¼ cup packed light brown sugar
  • 1/2 cup finely chopped walnuts
  • ¼ cup melted butter (I use salted)
Directions: 
  • For the streusel, in a small bowl, mix together the oats, coconut, brown sugar and melted butter with a fork until evenly combined. Chill for 45 minutes. 
  • Preheat the oven to 350 degrees and lightly grease a 9 X 9-inch baking pan. Can bake it in an 8 x8  but will have to adjust the baking time. 
  • In a mixing bowl (a stand mixer fitted with the paddle attachment or using a handheld electric mixer), add the butter and brown sugar and mix until light and creamy, 1-2 minutes.
  • Add the mashed bananas, eggs, and vanilla, and mix until well combined.
  • Add the oats, flour, baking powder, cinnamon, baking soda, salt and chocolate chips. Mix until the dry ingredients are just combined and no dry streaks remain (don't over-mix).
  • Spread the batter evenly in the prepared pan.
  • Recrumble streusel to break up clumps and spread the streusel evenly over the cake.
  • Bake for 22 minutes until a toothpick comes out clean or with moist crumbs and the top springs back lightly to the touch.
Perhaps you caught my "whine" on another posting about the price of a dozen eggs at Safeway last week for $6.99. My friend who was on a Costco run brought me these. Count the eggs carefully 
total cost  $7.98!! Do the math they're a bargain😁

  1. Bananas are now going on the grocery list to ripen and then bake this easy and delicious sounding recipe. On those eggs, I didn't realize how much they'd gone up in price until I read your recent post. Paid $5/dozen here in Minnesota a week ago. Argh.
