BEAT THE HEAT WITH A THREE-INGREDIENT APPETIZER AND A REFRESHING DRINK
Boursin Cheese Puff Pastry SquaresCook's Notes: It's hard to believe one appetizer could be so tasty made with just these two ingredients with a brushing of your favorite Extra Virgin Olive Oil. 2 boxes of Puff Pastry sheets make 30 appetizers. A pizza cutter works well to cut the squares.
Directions:
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper. If using two puff pastry sheets you will need two baking sheets.
- Work with one sheet at a time. Cover the other one so does not dry out.
- Lightly roll pastry sheet once. Cut into 15 squares. Flour hands and make a firm indent in the center of each square. Scoop a small teaspoon of Boursin cheese and roll into a ball shape. Place cheese ball in the indent on each square.
- Bake pastry squares 11 minutes. Remove from oven and immediately lightly brush warm pastry with olive oil.

- In a large pitcher, whisk together prosecco and limoncello.
