Catching Up with Ever Ready

IT'S A REGIONAL THING

Where I come from Ice Out refers to that lake moment many eagerly await each spring. And this year it was touch and go for the fishing opener. But with recent warmer temperatures and lots of wind the conditions were perfect to push the ice off just in time for the weekend.  
Many annual contests are held with prizes to see who can guess when that magical day may occur.
But in the Southwest when the metrologists talk incessantly about Ice Break, it means an accurate prediction when the first day of a new year the temperature soars to 100 or more.
Well, Ice Break occurred today (Sunday) in  Green Valley, AZ as the temperature soared to over 100.  But we missed the event as we made it back to Minnesota for the tail end of the fishing opener.

I follow the blog skinnytaste.com A recent posting of Burst Tomato Cottage Cheese Caprese Bowl with 20.5 grams of protein and under 300 calories sounded so good and healthy. The drizzle of dark balsamic was just the piece de resistance for me. It was perfect for a light supper but would be great for lunch too. I especially liked the extra touch of roasting the tomatoes. I added banana slices and a few cheese and crackers so it did exceed 300 calories. Some other add-ins to consider are fresh basil and nuts. 
  • Cottage cheese
  • Grape tomatoes
  • Olive oil
  • Diced cucumbers
  • Good quality dark balsamic vinegar
Directions:
  • Preheat the oven to 400 degrees. Line a small baking sheet with parchment paper.
  • Place the desired amount of grape tomatoes on the baking sheet and drizzle with olive oil. Bake for 5 minutes.
  • Start with cottage cheese on the bottom, add cucumbers, and tomatoes, and drizzle with balsamic vinegar.
