Ingredients for one drink
- 1 shot of vodka
- 1 shot of cranberry juice
- the juice of half a lime
- about ¼ cup of tomato juice
- a sprinkle of garlic salt
- ice
- fresh cranberries and rosemary to garnish
- Add your vodka, cranberry juice, lime, tomato juice, garlic salt, and ice to your cocktail shaker. Give it a shake and pour.
- Garnish with fresh cranberries and rosemary for a festive touch.
- 1/2 cup of butter, softened
- 2 large eggs, room temperature
- 2-1/3 cups of flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1-1/2 teaspoons ginger
- 1/4 teaspoon salt
- 1/8 teaspoon each nutmeg and ground cloves
- 1 teaspoon Saigon cinnamon or 2 teaspoons ground cinnamon
- 1 tablespoon lemon zest
- 3/4 cup dark brown sugar
- 3/4 cup mild-flavored molasses (unsulphured)
- 1 cup buttermilk
- 1/4 cup brewed coffee, warm
Optional Lemon Icing
- 1-1/2 cups powdered sugar
- 2 tablespoons butter
- 3 tablespoons fresh lemon juice
Directions:
- Grease a 9 x 9 metal baking pan. preheat oven to 350 degrees.
- In a medium bowl combine all dry ingredients except brown sugar, sift and set aside.
- Measure out 1 cup buttermilk and set aside.
- Beat butter on high speed for 30 seconds. Add in brown sugar and beat until combined. Add in eggs one at a time beating well after each addition. Add in molasses and coffee, mix well.
- Alternately add flour mixture with buttermilk and butter mixture.
- Bake for 28-32 minutes or until a toothpick comes out clean from the center.
- Either ice the cooled cake or serve with a dollop of whipped bread and a sprinkle of cinnamon.
- If icing cake beat those ingredients until smooth.
