Add a twist to your Taco Tuesday menu
with Breakfast Tacos, a customizable meal.Breakfast Tacos are filled with fluffy scrambled eggs, bits of sausage, cheese, tomato, and a sprinkle of green onion for a delicious breakfast treat. Top the tacos with your favorite salsa and a side of sliced avocados. YUM AND YUM!
These ingredients are enough for three tacos using mini pita bread. Have all ingredients prepped ahead for easier assembly.
Ingredients:
- 4 eggs
- 1/2 cup shredded cheddar or Pepper Jack cheese
- 1/3 cup cooked sausage, crumbled
- 1/4 cup milk
- 1 tablespoon butter
- 1/3 cup each of diced cherry tomatoes and mini red peppers
- 1/2 teaspoon cumin or elote seasoning
- 3/4 teaspoon parsley flakes
- 3 mini pita bread slices (4-inch size flax, oat bran, and whole wheat)
Directions:
- In a blender add eggs, spices, and milk. Mix well.
- Melt butter in a medium-sized fry pan.
- Add egg mixture and quickly add in onions, peppers, cheese, and tomatoes.
- Cook eggs until almost set on a medium-low setting.
- Remove the frying pan from the warm burner. Cover to keep warm.
- Microwave pita bread wrapped in a damp paper towel for 10 seconds.
- Divide egg mixture among 3 pita slices. Fold and secure with a toothpick. Serve with your favorite salsa and a side of fruit.
