Dorito Casserole

Layers of crushed Dorito chips, ground beef, salsa and cheese all baked to perfection for those busy weekday meals. A great option for family dining so you concentrate on holiday meal preparations. Everyone comes out a winner with this recipe. Pair the meal with a slice of cornbread and a clementine 

INGREDIENTS

  • 2 teaspoons olive oil
  • 1 pound ground beef (I used 90% lean)
  • 3/4 cup onion finely diced
  • 1 cup sweet mini peppers, diced 
  • 1/2 packet taco seasoning mix
  • 1- 16 oz. jar of you favorite thick salsa 
  • 1 cup frozen corn (no need to thaw) 
  • 1 cup light sour cream
  • 2 cups shredded cheese I used cheddar and Monterey Jack
  • 4 cups Dorito chips (I used plain but nacho cheese flavor works great too)
  • 1 cup grape tomatoes,  diced
  • Garnish 1/4 cup green onions, sliced
  • Cooking spray
  • Optional topping suggestions include:cilantro and diced avocados 
DIRECTIONS:
  • Preheat the oven to 350 degrees. Coat a 2-3 quart baking dish with cooking spray.
  • Heat the olive oil in a large pan over medium high heat. Add the beef, onions and peppers. Cook for 6 minutes breaking up the meat with a spatula and onions are  translucent.
  • Stir in the taco seasoning and salsa. Simmer uncovered for 3-4 minutes.
  • Remove the pan from the heat, stir in the sour cream, corn and diced tomatoes. 
  • Lightly crush the Doritos. Spread 1/3 of the chips over the bottom of the prepared pan. Place 1/2 of the meat mixture on top of the chips, then add 1/3 of the cheese in an even layer.
  • Repeat the process with another 1/3 of the chips, the rest of the meat, and 1/3 of the cheese.
  • Add the remaining chips, then the final layer of cheese. Cover the baking dish with foil.
  • Bake for 30 minutes. Uncover and bake for an additional 5 minutes 
  • Sprinkle green onions over the casserole, add a few crushed chips and your favorite toppings.

Puff Pastry Apple Hand Pies
Cook's Notes: 

Imagine making a light, crispy homemade mini apple pie at home which is way better than the  bakery! These Puff Pastry Apple Hand Pies are so delicious and so easy I can't say enough good things about the juicy cinnamony apple filling tucked into a puff pastry strip. They are a fun way to serve up individual little apple pies. 

Did you know hand pies originated in the south? You can find them baked, fried or deep-fried with sweet or savory fillings. A combination of apples work well in this recipe. Some suggestions include: Granny Smith, Fuji, Braeburn, Red Delicious, Macintosh and Jonathan
The recipe makes 6 large puff pastry apple hand pies. There is the option of making 12 mini pies by making a horizontal cut in each strip. Reduce the amount of filling on each strip.
Ingredients:

  • 4 cups apples, peeled and diced (I used 1 granny smith and 2 red delicious)
  • 2 teaspoons lemon juice
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unbleached or all-purpose flour
  • 2 tablespoons butter
  • 1/8 teaspoon salt
  • 17.3 ounces puff pastry, thawed at room temperature, but chilled (1 box)
  • 3-4 tablespoons all-purpose flour, for dusting the counter
  • 1 egg + 1 teaspoon water, beaten together
  • 3 tablespoons sugar mixed with 1/2 tsp, Saigon cinnamon
Directions: 
  • Peel and dice the apples into small pieces, then toss them with the lemon juice. Over medium-high heat add them to a skillet, with the brown sugar, cinnamon, flour, butter, and salt. Mix to coat and bring to a simmer, stirring occasionally. Cook 5 minutes, or until the sauce is thick and the apples are a little soft.
    Transfer mixture to a bowl, cover and cool completely in the fridge about 45 minutes. 
  • Preheat oven to 400 degrees. Work with one sheet at time keep other one in refrig wrapped lightly in wax paper. 
  • Lay one sheet of parchment paper on counter and dust with flour. Place one puff pastry sheet on parchment paper. Lightly roll and cut with a pizza cutter 3 horizontal strips and separate each one about 2 inches a part.  
  • Use a regular tablespoon and place 2 tablespoons on half of the strip keeping filling off the edges. If your filling is a little runny, drain as much of the caramel sauce as possible before adding it to pastry strip. Fold one half of the strip to the center. Crimp edges with a fork.
  • Brush pastries with the beaten egg and water, sprinkle with cinnamon sugar mixture.  Use a sharp knife and make a X in center for venting.
  • Bake in a preheated oven for 16-17 minutes, or until pies are puffed and golden brown.
  • Cool on baking sheet, then transfer to a wire rimmed cooling rack. 
Cooking Tips:
  • Thaw the frozen puff pastry sheets at room temperature for 40 minutes in box but keep them chilled until ready to use.
  • Use a serrated knife to slice the hand pies.

Cabernet Cranberry Blueberry Sauce
Cook's Notes: Add a fruit wine sauce as the perfect accompaniment for turkey, chicken or a pork roast dinner. Use a Cabernet, a full bodied wine and an inexpensive brand works for this recipe. The alcohol is reduced during the cooking process.
Ingredients:

  • One 8-ounce bag fresh cranberries
  • 6-ounces frozen blueberries (about 1 1/2 cups), unthawed
  • 1 cup Cabernet Sauvignon (or Shiraz, Merlot)
  • 1 cup granulated sugar
  • 2 tsp. Saigon cinnamon
  • 1/8 tsp. to 1/4 tsp. ground cloves, taste test
Directions:
  • Combine all ingredients in a medium to large pot and bring to a rolling boil, stirring intermittently. Make sure the pot has room for sauce to at least triple in volume. The juices from the berries release and as the mixture boils rapidly, it will foam and a too-small pot will easily overflow.
  • Reduce heat to low and allow sauce to simmer for about 20 to 30 minutes, or until reduced and thickened slightly, and most of the cranberries have burst. Sauce will thicken more as it cools.
  • Transfer to heat-safe jars or containers with lids. Allow sauce to cool at room temperature before refrigerating. Sauce will keep airtight in the refrigerator for at least 2 weeks.

Soup de jour

Cook's notes: While you can never have too many cookie recipes the same could also be said of soup. It's the perfect course for any meal. We all have our favorites and one of mine is Creamy Chicken and Gnocchi Soup with Spinach.
It's packed with flavor and a creamy goodness with every spoonful. Advance prep is a must for this recipe. Use a rotisserie chicken for a time saver. In fact, the veggies and chicken can all be diced, bagged and refrigerated a day ahead. Pair the soup with a slice of cornbread, your favorite sandwich or crusty artisan bread. Recipe serves 4-6 depending on the size of the bowl. To reheat the next day add more broth. 

Gnocchi are a variety of pasta consisting of various thick, small, and soft dough dumplings that may be made from semolina, ordinary wheat flour, egg, cheese, potato, breadcrumbs, cornmeal or similar ingredients, and possibly including flavorings of herbs, vegetables, cocoa or prunes.

Sidenote Alert: I was unable (trips to two up north grocery stores) to find gnocchi, mini potato  dumplings, so I had to substitute frozen mini cheese ravioli this go around for the soup. I was surprised it ended up being such a tasty substitute. 

Ingredients:

  • 1 TB. olive oil
  • 1 cup each diced onions, carrots and celery
  • 1/2 cup diced red peppers
  • 3 garlic cloves, minced
  • 1/2 tsp. each dried rosemary, thyme and parsley flakes
  • 2 bay leaves
  • 48 oz. chicken broth, low sodium
  • 2-3 cups cooked chicken, diced
  • 3/4 lb. mini potato gnocchi (freezer section) 
  • 2-3 handfuls of torn spinach leaves, stems removed 
  • 2-1/2 TB. butter
  • 3 TB. flour
  • 1/3 cup cream
  • 2 TB. dry white wine
Directions:
  • In a soup pot heat oil. Add in onions, carrots, celery, peppers and garlic. Sprinkle spices over the veggie mixture. Saute 2 minutes. Sweat veggies by covering and simmering on low for 10 minutes.
  • Remove cover, add broth and bay leaves. Bring to a boil simmer uncovered for 10 minutes. Add in gnocchi and chicken, simmer 5 minutes more.
  • While broth is simmering melt butter in a small fry pan on a medium heat. Add in flour and cook 1 minute. Whisk in cream and wine, cook until thickened. Add to chicken broth, the cream mixture with torn spinach leaves. Cook 5 minutes longer or until spinach is wilted. Remove bay leaves before serving.

Spinach and Artichoke Egg Casserole

Spinach and Artichoke Egg Casserole
Cook's Notes: A delicious healthy vegetarian egg casserole perfect for a holiday entertaining or a Sunday brunch. There are lots of options to customize with spices, cheeses and type of milk.  Recipe serves 6 and was adapted from twopeasandapod.com 
Ingredients: 
  • 1 tablespoon olive oil
  • 3/4 cup sweet onion, diced
  • 1 cup sweet mini red, yellow and orange peppers, diced
  • 2 cloves garlic minced
  • 5 cups packed fresh spinach
  • 1- 1/2 cups chopped jarred artichoke hearts packed in water, drained and patted dry on a paper towel  
  • 1/2 tsp. parsley flakes 
  • 1/4 teaspoon dried oregano
  • 1 tablespoon finely chopped fresh basil
  • Dash of crushed red pepper
  • Salt and black pepper to taste
  • 1- 1/2 cups shredded mozzarella cheese, white cheddar or Colby Jack, divided
  • 1/3 cup grated Parmesan cheese plus 2 tablespoons, divided
  • 8 large eggs
  • 3 tablespoons Almond Breeze Original Almond milk or 2% milk 
  • Chopped basil for garnish, if desired
Directions: 
  • Preheat oven to 350 degrees. Spray a 2-quart baking dish with nonstick cooking spray and set aside.
  • In a large skillet, heat olive oil over high heat. Add the onions and peppers, cook until tender, about 3 minutes. Add the garlic and cook for an additional 1 minute. Stir in the spinach and cook until wilted, about 3-4 minutes. Stir in the chopped artichoke hearts. Add dried oregano, dried parsley flakes and crushed red pepper. Season with salt and black pepper, to taste. Pour mixture into prepared pan and spread out evenly. Sprinkle 1 cup of the cheese and 1/4 cup Parmesan cheese over the mixture.
  • In a medium bowl, combine eggs and almond milk or 2% milk. Whisk well. Pour eggs over veggies and cheese. Top with remaining cheese and 1 tablespoon Parmesan cheese. 
  • Bake for 30 minutes or until eggs are set and slightly golden around the edges. A knife inserted into the center should come out clean. Remove from oven and sprinkle with fresh basil. Let cool for 5 minutes. Cut into squares and serve warm.
  • Note-if you want to make this dairy-free, you can use your favorite dairy-free cheese!
