Cook's Notes: It's A Wrap, a popular venue to add to your holiday entertaining. Wraps with assorted fillings are set up for guests to make their own sandwiches or you can prepare the wraps ahead of time. Just wrap with plastic wrap, refrigerate and cut into small bites right before serving. For a healthier twist wraps can be prepared with butter lettuce leaves.

Reindeer Bar Feature Sweet Treats

CHOCOLATE MOUSSE
Cook’s notes: Ring in the New Year with this rich, decadent and oh, so good dessert with a bubbly glass of champagne. Serve the mousse in small demitasse-like cups. Add a plate of cookies and you are ready to toast 2022. 
Makes 5-6 small servings.
Ingredients:
  • ¾ cup chilled heavy cream
  • 4 large eggs at room temperature
  • ¼ cup strong coffee or espresso at room temperature
  • Dash of salt
  • 3 teaspoons sugar, divided
  • 1/8 teaspoon crème of tartar
  • 8 oz. of good quality semi-sweet chocolate chopped or bittersweet chocolate (61-72% cacao) for this recipe I used one bar of each.
  • 2 tablespoons Kahlua or Amaretto
Directions:
  • Separate yolks and whites.
  • Beat 3/4 cup whipping cream and refrigerate.
  • Combine egg yolks, coffee or espresso, salt, and 2 teaspoons sugar in a metal bowl.
  • Whisk ingredients and set bowl in a larger pan of simmering water.
  • Whisk constantly until mixture is lighter in color and has doubled in volume about 6 minutes.
  • Remove bowl from water and stir in chopped chocolate pieces. Whisk until chocolate is blended into egg mixture.
  • Add in Kahlua or Amaretto, mix well and cool to room temperature.
  • Beat egg whites in another bowl with crème of tartar and the remaining 1 teaspoon of sugar. Beat until firm peaks form.
  • Gently fold egg whites into whipped cream mixture.
  • Fold egg whites/whip cream mixtures into chocolate/egg mixture.
  • Spoon into serving cups. Top with crushed almonds or toasted coconut.
  • Refrigerate until serving.

Warm White Russian 

Cook's Notes: An easy wintertime dessert cocktail? This rich riff on the usually icy White Russian gets a bold java jolt and a warmup from hot coffee. Just drop in a chocolate truffle, cocoa-bomb style, for next-level lusciousness. Recipe from Allrecipes.com
Ingredients:
  • 3 fluid ounces hot strong coffee
  • 1 fluid ounce coffee-flavored liqueur (such as Kahlua®)
  • 1 fluid ounce vodka
  • 1 fluid ounce half-and-half
  • 1 round chocolate truffle
Directions:
  • Fill a heat-safe glass mug with boiling water; let stand a few minutes to warm the mug. Discard water.
  • Add coffee, coffee liqueur, and vodka to the mug; stir gently to combine. Drizzle half-and-half over the drink. Place truffle on a spoon or thread onto a decorative pick; balance on the glass rim.
  • Tip truffle into the drink just before drinking.

Rejoice it's time for the Annual Reindeer Bar 

The popular Reindeer Bar made its first appearance on Ever Ready blog in 2014 offering food and drink ideas for the holiday season. Its first featured food idea was a Laughing Cow cheese product turned into reindeer food.

Smoked Salmon Breakfast Casserole with Potatoes and Veggies

Rise and shine start the day with a power-boosting dish perfect for brunch and even beyond. Pair the Smoked Salmon Breakfast Casserole with a refreshing jicama salad (recipe previously posted).

Cook's Notes: When you're looking for a breakfast that is both elegant and easy for the company, this multilayered casserole is just the ticket. It's loaded with potatoes, smoked salmon, and a smattering of fresh herbs. Cottage cheese naturally melds into the eggs, creating pillowy lightness throughout the mixture, while goat cheese creates dense pockets of creaminess. 
Recipe adapted from Cooking Light and serves 6 and under 400 calories a serving. Use a 9 x 9 glass baking dish or a glass 9-inch pie pan.
Cooking Tips: Bok choy substitutes for spinach. Peppers, onions, cheese, potatoes, and salmon can all be prepared ahead ready for sautéing.

Smoked Salmon Breakfast Casserole with Potatoes and Veggies
Ingredients:
  • 2-1/2 cups red or Yukon potatoes, peeled and cut into 1/2-in. cubes
  • 6 large eggs
  • 3 large egg whites
  • 3/4 cup 2% milk
  • 1/2 cup plain small curd whole-milk cottage cheese
  • 2 tablespoons chopped fresh dill or 1 teaspoon dried dill
  • 2 tablespoons chopped fresh chives or 1 teaspoon dried chives
  • 1/2 teaspoon dried parsley flakes
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 3/4 cup diced sweet onions
  • 2 cups bok choy, chopped or spinach, torn leaves and stems removed
  • 1 cup sweet mini peppers, red and yellow diced
  • 8 ounces smoked salmon, flaked
  • Goat cheese, crumbled (about 3/4 cup) or shredded white cheddar cheese
  • Dash red pepper flakes
Directions:
  • Bring a pan of salted water to a boil. Add in potatoes, cook uncovered 10 minutes or until potatoes are al dente. Drain.
  • Preheat oven to 350 degrees.
  • Place eggs, egg whites, milk,, chives, dill, parsley flakes, mustard, and pepper in a large bowl; whisk to combine or in a blender on low. Whisk in cottage cheese and set aside. Lightly grease baking dish.
  • Sauté peppers, spinach or bok choy, and onions in olive oil until spinach or bok choy is wilted. Place in bottom of baking dish. Scatter potatoes, cheese, and crumbled smoked salmon over pepper/onion mixture.
  • Pour milk mixture over potato and salmon mixture. Bake dish at 350 degrees for 35 minutes or until a knife comes out clean when inserted in the center.


Look for more ways to be courteous when standing in shopping lanes, pick-up lanes, and store parking lots.
