Monday...
Bella requested this poster to be posted on today's blog. Yesterday was a tough day stuck inside. There were nose prints left behind on several windows as she watched it rain and rain and rain. Perhaps the sun will shine today to cheer her up.

Caribbean Dip
recipe adapted from bettycrocker.com 
Cook's notes: Calories can be trimmed in this recipe by using  lite sour cream and fat free cream cheese. If you have never tried lime-flavored chips put them on your list. Quite yummy!
Another option for this dish includes adding avocado and cooked chilled shrimp. The dip now becomes a salad :)
Ingredients:
  • 1 package of cream cheese softened
  • 1/2 cup lite sour cream  
  • 1 TB. taco seasoning mix from 1-1 oz. package
  •  1 can black beans drained and rinsed
  • 1 small corn of corn drained
  • 1/2 cup chopped red pepper
  • 1/2 cup red onion chopped
  • 1/2 cup mango
  • 1--2 tsp. jalapeno chiles
  • lime-flavored or plain tortilla chips
Directions:
  • With a mixer blend sour cream and cream cheese
  • Add in taco mix and blend till smooth
  • Place chips on bottom of plate, add cream cheese mixture and toppings 
  • Top with cilantro or lime slices placed to the side of plate
