Summer Salad

Blueberry Corn Salad
Cook's notes: This salad features an unusual pairing with blueberries and corn together. I must admit I was a bit skeptical as I looked at a picture in a magazine to use both of these ingredients in a salad. But the flavorful combination won me over. This lite vinaigrette Pomegranate Blueberry pictured here has no preservatives and really enhanced the flavor of the salad. I cooked one cob of corn in boiling water and used a knife to get corn off the cob. Cashews were in this salad but I think honey roasted almonds would be better choice.  This salad is a healthy choice for summer eating. 

Ingredients:
Romaine lettuce or mixed greens
cantaloupe chunks
blueberries
corn 
honey roasted almonds
green onions
shredded Swiss cheese
optional adding cucumbers
Directions:
Assemble salad and drizzle dressing on top right before serving
