Cook's Notes: The best laid plans can often go awry-take for instance this recipe from Joni. It started out as energy bites with all sorts of healthy ingredients-then chocolate entered the room and took over the recipe. And all for the good I might say. These bites were off the charts for me quite reminiscent of Reese Peanut Butter Cups. Lucky the recipe makes only 20 as they'd never make it to the freezer. It's a kid-friendly treat easy for anyone to prepare. Let's begin with the healthy part though it's a proven fact chocolate in moderation can be healthy. What a day brightener were these energy bites.
Ingredients:
- 1 cup oatmeal (quick kind)
- 1/2 cup each crushed graham crackers and coconut
- 3/4 cup peanut butter (any kind)
- 1/4 cup mini chocolate chips
- Optional chopped peanuts or walnuts
- Line a baking sheet with parchment paper.
- In a large bowl mix all ingredients and form into 2 inch balls. Place on baking sheet and chill several hours in refrig until firm.
- Ghirardelli Dark Chocolate Melting Wafers
- or Chocolate Almond Bark
- Follow manufacturer's directions for melting. Place a toothpick in each energy bite. Roll one at a time in chocolate and place back on baking pan.
- Chill until firm.
