Gluten-Free Date Nut Muffiins with Chocolate Chips

Fuel up today with yummy healthy almond flour muffins made with dates, nuts and chocolate chips. I 
with these moist and naturally sweetened muffins. And they're gluten-free.
Cooking Tip:Coconut oil comes in a solid state in a jar. To use in this recipe melt oil first in microwave, then proceed with recipe. 
Recipe makes 9 muffins and was adapted from eatingbirdfood.com
Ingredients:
  • 1 cup almond flour
  • 1 cup medjool dates, pitted(about 9 large ones)halved 
  • 1/8 cup water
  • 3 large eggs
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon salt
  • 1/2 teaspoon Saigon cinnamon or 1 teaspoon regular cinnamon 
  • Optional 1/3 cup mini chocolate chips 
  • 1/2 cup chopped walnuts
Directions:
  • Preheat oven to 350 degrees. Line muffin pan with cupcake liners. 
  • Stir together dry ingredients: almond flour, baking soda, cinnamon and salt.
  • Place dates and water in blender. Pulse until combined.
  • Add in eggs, coconut oil, and vanilla. Blend until smooth.
  • Pour date and egg mixture over the almond flour mixture. Stir to combine. Add in chips and nuts, gently stir. Do not overmix.
  • Ad 1/3 cup batter to each cupcake liner in muffin tin. 
  • Bake 18 minutes or until tops are golden brown and a toothpick comes out clean.
