Gingerbread Trifle

Trifle is a dessert dish made with thick custard, a variety of fruits, sponge cake, fruit juice, or jelly. Sometimes a small amount of alcohol is used to moisten the cake. These ingredients are usually arranged in layers. Trifles are often served at Christmas time.

Gingerbread Trifle
Cook's note: If you like a lot of lemon flavor add another tablespoon of curd to whip cream. Lemon curd can be found in the jelly aisle. Recipe serves 8. Be creative and serve the dessert in a fun glass such as a martini or margarita glass. 
Ingredients:
  • 1 box of gingerbread mix
  • 1 jar lemon curd
  • 1-pint whipping cream
  • 2 tablespoons lemon zest
  • Toasted pecans and coconut for topping 
Directions:
  • Prepare gingerbread mix according to box directions.
  • Whip cream and fold in 6 tablespoons lemon curd and lemon zest.
  • Use martini glasses or parfait glasses for individual servings or a glass compote.
  • Place a layer of crumbled cake in the bottom of the glass, add a layer of the lemon cream mixture and repeat with another layer of cake then lemon cream mixture
  • Sprinkle with toasted pecans and coconut for the topping.

My all-time favorite gingerbread man story is "The Gingerbread Man Loose in the School".
It's a fresh and funny twist on the original story. 
FYI I used to help my daughter out in her kindergarten room. Her class made and decorated a gingerbread man. Secretly the cookie went off to be baked by the cooks and the hunt began by the class throughout the school to find it. It was such a fun activity. 
Book Synopsis:
When a class leaves for recess, their just-baked Gingerbread Man is left behind. But he's a smart cookie and heads out to find them. He'll run, slide, skip, and (after a mishap with a soccer ball) limp as fast as he can because: "I can catch them! I'm their Gingerbread Man!"
With help from the gym teacher, the nurse, the art teacher, and even the principal, a deliciously sweet ending is served up for both the Gingerbread Man and the children who made him. S
uggested ages 4-7.
