Classic Meatloaf with a Tangy Glaze
Cook's Notes: Sometimes the simplest of meals is the best but can be overlooked by those wanting to try something new. I also realize many of you probably have your own go-to meatloaf recipe perhaps one passed down from your mother and/or grandmother but give this one a try. The meatloaf is so tender and juicy on the inside with a sweet and tangy sauce that glazes the meatloaf which adds so much flavor. The meal was served with two sides, recipes that have been previously posted.

Cooking Tip: Start with two pieces of bread add another if the meatloaf mixture needs more binding. Ingredients:
- 2 eggs, lightly beaten
- ½-3/4 cup seasoned fine dry bread crumbs Panko (I used 2 whole bread slices)
- 2 cloves garlic, minced
- ½ cup shredded carrot (1 medium)
- 1/2 cup chopped onion (1 small)
- 1 tablespoon dried parsley flakes
- 1-1/2 pounds lean ground beef (80%)
- 3 tablespoons chili sauce
- 1 tablespoon Dijon-style mustard
- 1 tablespoon Worcestershire sauce
- 3/4 cup ketchup
- 1 ½ tsp white vinegar
- 2 ½ tablespoons brown sugar
- 1/2 teaspoon each garlic and onion powder
- Pinch of red pepper flakes
- Preheat oven to 350 degrees. In a food processor place onion, carrots, garlic, and 2 slices of bread. Pulse 2-3 times. In a large bowl stir together beaten eggs, bread crumbs, carrot, onion, garlic, parsley flakes, the 3 tablespoons chili sauce, mustard, and Worcestershire sauce. Add ground beef; mix well.
- Place in a greased large loaf pan. Bake covered with foil for 30 minutes. Uncover and spread with glaze. Bake uncovered for 15 minutes more.
