Pumpkin Pie Bites

Cook's Notes: It's a well-known fact that Thanksgiving dinners can be calorie busters, especially the deadly slice of pumpkin pie with whipped cream at the end. So imagine discovering an alternative to a slice of pie where you can savor the same taste but pare down the calories. This dessert is made with a product called mini fillo shells by Athens.
Each shell is filled with a tablespoon of baked pumpkin pie filling, and a scant teaspoon of whipped cream then sprinkled with cinnamon.    

Ingredients: 
  • Mini Fillo Shells
  • 1 can (16 oz.) of pure pumpkin pie filling plus the ingredients listed on the can
  • Whipped cream
  • Cinnamon
Directions:
  • Make shells up according to package directions bake for 5-7 minutes on a baking sheet and cool
  • Make the pumpkin pie filling following the can's directions just as you would for baking a pie.
  • Pour ingredients into a Pyrex dish (no pie crust used) and bake as you would for making a pie but cut back time by about 5-7 minutes.
  • Cool pie ingredients and then scoop out and place a spoonful into each individual shell. 
  • Top each shell with whipped cream and a sprinkle of cinnamon.
