Veggie Rainbow Pinwheels

Cook's Notes: These veggies pinwheels can be served with or without chicken. The recipe is adapted from dinneratthezoo.com  and ingredients can be adjusted depending on the number of servings needed. Each wrap log can be sliced into 6-7 pieces. These pinwheels make a great appetizer for game day or as a side with a bowl of your favorite soup. 

Cooking Tip: Avoid spreading too much of the garlic herb cheese over the tortilla as you will be rolling the tortilla.

Creamy Tomato and Parmesan Cheese is a good choice for a winter warm-up.

Ingredients: 

  • Spinach Herb Tortilla
  • Spinach leaves
  • Red and yellow pepper slices 
  • Mushroom slices
  • Thin slices of carrots (peel carrot lengthwise) 
  • Shredded purple cabbage 
  • 1 container of spreadable cheese garlic herb (I used the Alouette brand) 
  • Optional adding shredded chicken or thin slices of cooked salmon

Directions:
  • Spread cheese almost to the edges of  the tortilla
  • Arrange veggies in rows and roll the tortilla tightly. 
  • Cover tightly with plastic wrap and refrigerate for several hours before cutting. 
Have you ever wondered what makes a good store-bought rotisserie chicken and what store has the best one? "Southern Living Magazine" set out to do just that. 


How the Rotisserie Chicken was tested
Participants tasted six different traditional or original flavored rotisserie chickens to determine the fan favorites. Each participant was given a piece of breast meat and a piece of dark meat. Comments were recorded about each brand. The chickens were ranked from 1 to 6 independently using a specific scoring to rate each one.  After the results were compiled an overall favorite was picked.

Winner: Whole Foods
The skin was deep golden brown and crispy. The drumsticks were so plump. It was juicy, but not greasy. The flavor was rich, but not over-seasoned. 

Did you know Whole Foods doesn’t put rotisserie chicken out until after 2 p.m.? Yeah, me neither. It was worth the wait. I watched as the deli attendant pulled them out and temped every single chicken. I asked her, and that is regular protocol—they don’t have a uniform cook time (though it usually ranges from 1 to 1 ½ hour); they go by temperature to ensure the chicken is optimally cooked. It was impressive. But not as impressive as the chicken.

You’ll want to time your grocery run right, as the USDA advises consuming or refrigerating ready-to-eat rotisserie chickens within two hours of purchase. Those who aren’t serving it within that time frame for a quick weeknight dinner should cut up the chicken into several large pieces that will fit into shallow, covered containers and place them in the fridge to be used within three to four days.

Note Costco was not part of the testing but I know many shop there. Here is a review I found online. It was an eye-opener.
