Shrimp Quesadillas

With lean shrimp as the star ingredient and a generous amount of protein, these easy quesadillas are filling and delicious. The recipe filling is enough for one 7-8 inch flour tortilla that is cooked and cut into fourths.
Cooking Tips: Prep all ingredients so you are ready to go when stir-frying and cooking the quesadillas. If not using a panini maker use a non-stick skillet so easier to flip the quesadilla.
Ingredients:- 1/2 tablespoon olive oil
- 1/4 cup diced sweet onion
- 1/4 cup diced mini sweet peppers
- 2 garlic cloves, minced
- 1-1/2 cups cooked shrimp, thawed and diced in half and patted dry on a paper towel
- 1/4 teaspoon each of oregano, chili powder and Elote seasoning
- 2 large high-fiber flour tortillas, 110 calories or less, I used Ole Xtreme or GF tortillas
- 1 cup Monterey Jack cheese, or pepper jack, shredded
- Sauté in olive oil the onions, peppers, garlic, and seasoning. Add in cooked shrimp and sauté for 2 minutes more.
- Place the sautéed mixture on a paper towel to make sure there is no liquid.
- Heat the panini maker according to directions or a non-stick pan at medium heat.
- Brush each tortilla on one side very lightly with olive oil. Place one tortilla (lightly greased side down) in the middle of the pan or panini maker with the sautéed mixture on top.
- Sprinkle grated cheese over the top of the shrimp mixture.
- Top with other tortilla (greased side up and cook until crisp and the green light goes off. If using a skillet cook until the bottom side is browned and with a wide spatula quickly flip over to brown the other side. Press lightly on top to continue cooking until browned.
- Serve with chopped lettuce, chopped tomatoes, avocado slices and salsa.
