- 4 eggs
- 3 tablespoons milk or half-and-half
- Salt and pepper to taste
- 1/2 teaspoon each of parsley flakes and Elote seasoning or cumin
- 1 teaspoon butter
- 4 slices of bacon
- 2 slices of low-fat cheese e.g. mozzerella or provolone
- 1 cup diced cherry tomatoes, drained on a paper towel
- 1 medium-sized avocado sliced
- Whole wheat English muffins
Directions:
- Cut avocado into slices and set aside.
- In a blender mix eggs, milk, and spices. Set aside.
- In a frying pan cook bacon crisp, drain on a paper towel, and set aside
- Wipe the pan free of grease and melt butter. Scramble eggs adding in diced tomatoes.
- Toast muffins and assemble.
- Add cheese and microwave for 18 seconds
- Add top of English muffin and enjoy.
