It's All About Breakfast



You will need both hands to manage this breakfast sandwich. It's made with a whole wheat English muffin, scrambled eggs,  bacon, avocado slices, and low-fat cheese. A hearty protein-rich breakfast to start your day. The recipe serves two. It's freezer-friendly and easy to customize. 
Ingredients: 
  • 4 eggs
  • 3 tablespoons milk or half-and-half
  • Salt and pepper to taste
  • 1/2 teaspoon each of parsley flakes and Elote seasoning or cumin
  • 1 teaspoon butter
  • 4 slices of bacon
  • 2 slices of low-fat cheese e.g. mozzerella or provolone
  • 1 cup diced cherry tomatoes, drained on a paper towel
  • 1 medium-sized avocado sliced
  • Whole wheat English muffins
Directions:
  • Cut avocado into slices and set aside. 
  • In a blender mix eggs, milk, and spices. Set aside.
  • In a frying pan cook bacon crisp, drain on a paper towel, and set aside
  • Wipe the pan free of grease and melt butter. Scramble eggs adding in diced tomatoes. 
  • Toast muffins and assemble.
  • Add cheese and microwave for 18 seconds
  • Add top of English muffin and enjoy.
