HAPPY VALENTINE'S DAY

  


GET CRACKING-Skip the scrambled eggs, forget the fried ones, and savor a bite of these Classic Baked Eggs. Lots of possibilities for using a variety of tasty toppings. Variations are posted at the end of the recipe. 

The recipe was adapted from Southern Living January/February 2021 and serves 2. It can easily be increased using a ratio of 1 teaspoon of heavy cream per ramekin. 
Italian Baked Eggs with Herbs and Parmesan Cheese
Ingredients:
  • Butter
  • 2 teaspoons heavy whipping cream
  • 4 large eggs
  • Salt and Pepper to taste
  • Fresh thyme and rosemary or 1 teaspoon each rosemary and thyme or 1-1/2 teaspoon dried Italian seasoning
  • Finely grated Parmesan cheese
Directions:
  • Preheat oven to 375 degrees and butter 2 (6 oz.) ramekins. Place ramekins on a baking sheet.
  • Pour 1 teaspoon heavy cream into each ramekin. Crack two egs over cream.
  • Sprinkle each with salt and pepper to taste.
  • Bake until set around the edges but still a bit jiggly in the centers, about 14 minutes.
  • If you only make one egg per ramekin, bake it for 12 minutes. 
  • Remove from oven and let stand for 2 minutes. Garnish with herbs and cheese.
Other topping options include:
Mediterranean
Drizzle of marinara sauce, crumbled feta cheese, and chopped fresh parsley
American
Chopped bacon, grated Cheddar cheese, and fresh chopped chives

Pair the meal with Avocado Toast
