Cheesy Baked Ravioli with Sausage and Tomato Sauce

 

‘When Lilacs Last in the Dooryard Bloom’d’ is one of the most famous poems by the American poet, Walt Whitman (1819-92). Across 206 lines of innovative free verse, Whitman offers an elegy for Abraham Lincoln, who had been assassinated shortly before Whitman wrote the poem. Cheesy Baked Ravioli with Sausage and Tomato Sauce 
Cook's Notes: Comfort food that's family-friendly, freezable, make-ahead and can be a vegetarian dish when omitting the meat. It's a hearty and delicious meal, easily halved. Make the tomato/meat sauce a day ahead for flavors to meld. Add some creativity to your sides and use a fun glass like a margarita one. Fill glass with fresh fruit or your favorite salad. 
Ingredients:
  • 1lb. sweet Italian sausage
  • 1- 20 oz. All-natural 4 Cheese Ravioli (I used a refrigerated Buitoni product) 
  • 1-24 oz. jar marina sauce
  • 1-14.5 oz. can crushed tomatoes garlic and basil 
  • 1 teaspoon each Italian seasoning and parsley 
  • 1/2 teaspoon sugar
  • Fresh basil
  • 2 cups grated mozzarella cheese
  • Grated Parmesan cheese
Directions:
  • Brown meat, crumble, and set aside.
  • In a large saucepan add crushed tomatoes, marinara sauce, spices, and sugar. 
  • Mix well and cook on low heat for 25 minutes. Stir in crumbled sausage. 
  • Refrigerate until assembly. 
  • On the bottom of a 2.1 qt. baking dish spread out 3/4 cup of the meat sauce. 
  • Spread ravioli evenly over the sauce. (No need to cook ravioli ahead)  Add rest of meat sauce. 
  • Sprinkle chopped basil, mozzarella cheese, and Parmesan cheese over the dish. 
  • Bake uncovered @350 degrees for 30 minutes.

Dudes Rush In

After reading Lynn Downey's new debut book “Dudes Rush In” I feel like she had just booked me into a dream vacation at the H Double Bar Dude Ranch in Arizona. Downey brings her knowledge of dude ranches and skills as a research historian to create an engaging historical mystery. The setting, a fictional town of Tribulation was based on her visits to various dude ranches in the surrounding area of Wickenburg, AZ.

The story takes the reader back to San Francisco in 1952, where an aspiring war widow Phoebe McFarland decides it's time to make some changes in her life. With a bold move, she quits her job, bids her friends farewell, and heads south to spend the next six months on her in-laws' dude ranch in Tribulation, Arizona. Phoebe has fond memories of having spent many vacations there. She's happy to have the opportunity to spend time with her husband's sister. In exchange for room and board, Phoebe has volunteered to help out in the ranch's office organizing all the paperwork. She has high hopes with extra free time to finally finish the novel that has been in the works for some time. Soon after her arrival, Phoebe's novel writing is derailed with the discovery of an old diary hidden in a desk. Phoebe's life collides with a young woman, Ellender Shepherd, owner of the diary from decades earlier. She is swept into Ellender's story that captures her early married life and the early growth of Tribulation, a once-thriving mining town.

As Phoebe stumbles onto secrets from Tribulation's past, unexpected discoveries led to a few shocking revelations. She sets herself on a dangerous course while trying to solve a few mysteries. Betrayal, greed, redemption, and love make Phoebe and Ellender's stories intriguing, heartwarming, and a touching read with an unexpected ending. With two stories running simultaneously throughout the novel, I also found myself swept into Ellender's story as secrets and clues began to unravel. Phoebe's story is told in the third person and Ellender's in the first person. Certainly, a clever way to format a story keeping the reader engrossed. You may be asking yourself how would Phoebe's story be different if she hadn't found Ellender's diary?

Downey's meticulous research enhances the story with authentic details. Her vivid descriptions of desert landscape, exterior, and interior of the dude ranch, type of hospitality offered guests, the dynamics of social hours and dinners, visits into Tribulation and surrounding area effectively capture the ambiance of visiting an Arizona dude ranch back in the early '50s.

With guest comfort always a top priority you might want to consider extending your stay. You certainly don't want to miss Phoebe's continued adventures in Tribulation at the H Double Bar Dude Ranch, a forthcoming book two of the series. I suspect there will be another mystery to solve.

Author Lynn Downey's research takes her out west. 

Lynn Downey is a western historian, novelist, and native Californian. She is the former company historian for Levi Strauss & Co. and wrote the first biography of the founder, Levi Strauss: The Man Who Gave Blue Jeans to the World, which won the silver INDIE award for biography from Foreword Reviews. Her 2019 book Arequipa Sanatorium: Life in California’s Lung Resort for Women won the WILLA Award from Women Writing the West. When she’s not writing she works as a consulting archivist and historian for museums, libraries, and businesses.

Her next book, "American Dude Ranch: A Touch of the Cowboy and the Thrill of the West" will be published by the University of Oklahoma Press in 2022.

Chicken Salad with Apples, Grapes, and Cranberries in a Yogurt Dressing

Cook's Notes: 
Add some healthiness to your chicken salad lunch with a yogurt dressing. Extra add-ins make this salad shine for a scrumptious meal. To reduce calories serve on a romaine lettuce leaf or with whole wheat bread.  
Salad Ingredients:
  • Chopped cooked chicken or shredded rotisserie chicken 
  • Chopped crisp apples
  • Dried cranberries or cherries
  • Chopped walnuts
  • Chopped celery
  • Halved red grapes
  • Romaine lettuce leaves
Yogurt Dressing
  • Plain Greek yogurt mixed with 1-2 teaspoons lite mayoniase

Directions:
  • In a bowl add all salad ingredients except romaine.
  • Mix enough yogurt with mayonnaise only to moisten the salad. 
  • Refrigerate for 2 hours to chill salad mixture.

Broccoli Quiche Cups with Bacon and Pepperjack Cheese

Broccoli Quiche Cups with Bacon and Pepperjack Cheese
Take the mundane out of your usual breakfast meal and serve a crustless mini quiche.  Swap half-and-half for whipped cream and save 60 calories and 6 grams of saturated fat per serving. Be creative with veggie choices. Recipe adapted from Taste of Home publication. The recipe makes 8 quiches using a standard size muffin tin. 
Ingredients:
  • 1 cup finely chopped broccoli florets
  • 1 cup shredded pepper jack cheese
  • 6 eggs, lightly beaten
  • 3/4 cup heavy cream or half and half
  • 1/3 cup bacon bits ( 4 slices of bacon)  
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon dried parsley flakes or dried Italian seasoning 
  • 1 shallot, minced
  • Salt and pepper to taste
Directions:
  • Preheat oven to 350 degrees.
  • Grease muffin tin well so quiche removal is easier. 
  • Divide broccoli, cheese and cooked bacon among the muffin cup wells.  
  • Pulse liquid ingredients once in a blender and divide the liquid among the cups. 
  • Bake at 350 degrees until set, 15-20 minutes.

Lemon Raspberry Cupcakes

 

Lemon Raspberry Cupcakes with Sprinkles (as everything is always better with sprinkles) to celebrate my husband's birthday!
Lemon Raspberry Cupcakes
These delectable cupcakes are moist and just melt in your mouth. It's an easy recipe with a yummy raspberry and lemon combo. I used sparkling sugar as a decorating touch or you could frost cupcakes and top with a single raspberry. I highly recommend these cupcake liners with foil on the outside and a paper liner inside which adds stability to the cupcake after removal from the muffin tin.  
Recipe adapted from a publication RealFood (Lunds and Byerlys) Summer 2021
and makes 12 cupcakes.

Cupcake Ingredients: 
  • 2 cups flour
  • 1/2 teaspoon each baking soda and baking powder 
  • 1/4 teaspoon salt
  • 1/4 cup fresh lemon juice
  • Zest from 2 medium-sized lemons 
  • 3/4 cup buttermilk
  • 1/2 cup softened butter
  • 3/4 cup honey
  • 2 large eggs
  • 1/2 pint raspberries mixed with 1 tablespoon flour
Frosting Ingredients:
  • 2 cups powdered sugar
  • 1-2 tablespoons jam e.g. raspberry, strawberry
  • 1 tablespoon softened butter 
  • 1/2 teaspoon almond extract 
  • 1 little drop of red food coloring
  • Milk added as needed for spreading consistency
Cupcake Directions:
  • Rinse berries and set to dry on a paper towel.
  • Preheat oven to 350 degrees.
  • Sift flour, baking soda, baking powder, salt, and lemon zest. Set aside.
  • In a liquid measuring cup combine lemon juice and buttermilk, set aside.  
  • In a mixing bowl cream butter until fluffy, add in honey, and mix well. Add in eggs one at a time and mix.
  • Add half of the reserved dry mixture to the butter mixture, mix on low just until combined. 
  • With the mixer on low slowly add lemon/buttermilk mixture and then add in remaining dry ingredients just until combined.  
  • Mix dried raspberries with 1 tablespoon flour and gently fold into batter. 
  • Fill muffin cupcake liners 3/4 full and bake for 18 minutes. Check at 16 minutes with a toothpick. 
  • Cool cupcakes on wire cooling rack. 
Frosting
  • Mix all ingredients (start with one tablespoon on the jam, taste test first) and frost cooled cupcakes 2 at a time adding sprinkles as frosting sets quickly. Refrigerate cupcakes for 1/2 hour.  
    I went for an old-fashioned look as the teacup and saucer came from my daughter who once received it as a gift from her grandma (my husband's mother).

The Lily Of The West

 

It takes a very gifted writer to write historical fiction filling in the spaces of a historical time period and making it feel real. Kathleen Morris is just that writer whose superb craftsmanship makes a time period and characters come alive. Her work shines in her debut novel “The Lily Of The West.”

Writing in the first person from a women's point of view is not often found in traditional westerns. Morris gives the reader a new perspective on a well-known figure in history, Mary Katherine Haroney, nickname "Big Nose” Kate. How she got her nickname is still a subject of debate. Some say it was because she actually had a rather large nose. Others claim it was because she was always sticking her nose into other peoples’ business. She is best known as the on-and-off-again girlfriend of Doc Holliday.

As a Hungarian immigrant, Kate was 15 when her family needed to flee their homeland. They arrived in Davenport, Iowa to make a new life. Soon after, Kate becomes an orphan when both parents die. Kate is forced to forge her own new path, leaving behind her two siblings. She is a resourceful woman who is forced to reinvent herself many times depending on her circumstances.

On her own, Kate travels to the new American Frontier, where she soon becomes known as “The Lily of the West,” the belle of the Dodge City music halls, known for her musical talents, gambling skills, outspoken manner, and alluring appearance. Along the way, Wyatt Earp becomes a love interest, and later, Doc Holliday. She is a trusted friend of the Earp family and Bat Masterson. She and Doc Holliday become a powerful couple throughout the new west. Their relationship was volatile often turning self-destructive. The battle at the O.K. Corral may have been a brief moment in US History with Doc and the Earp family, fighting against a group of Cowboys, who were quick to shoot and didn’t care about the law. But most regard it as the most famous gunfight that occurred in the American Old West and it only lasted about thirty seconds. Kate fled Tombstone after the gunfight. The town of Globe became Kate's sanctuary where she ran a boardinghouse.

What stands out for me as a reader is Morris's ability to create a memorable character who is compassionate, loyal, and self-reliant. We find Kate perseveres no matter what challenges are thrown her way during a tumultuous time period of lawlessness. Morris's sentences are impeccable and eloquent making the book a mesmerizing read sweeping me into the frontier era of the old west. The last few chapters are poignant as Kate stands by her man who is dying of tuberculosis.

Morris's writing has a nice flow from chapter to chapter keeping the reader engaged. The only way a writer can strike a balance between the world of fiction and the boundaries of time and place of real-life events is by meticulous research. It has served her well in telling the story. I was intrigued by Morris's notes at end of the book about Kate's life after Holliday died. I was not expecting the direction her life took for the next 30 years.  

I highly recommend this book to those who enjoy historical fiction and a strong woman character living on the western frontier. 

Readers will not be surprised to know Morris's debut novel was the winner of the 2019 Western Fictioneers Peacemaker award.
Morris's fans can rejoice she has a new book out "The Transformation of Chastity James" published by Five Star.

Fishing Opener

Thousands of Minnesotans are set to officially put winter in the rearview mirror Saturday May 15th with the start of the 2021 fishing season.  The opener, which is revered by anglers, is considered an official state holiday by those who participate — especially those who will hit the lake at midnight Saturday (the official start time) just to have a shot at a walleye. For many it’s a family tradition like no other in Minnesota.
I posted this photo years ago when my husband was gifted with a fishing guide for his outdoor adventure His catch of walleye and northerns was impressive. It helps when someone can lead you through unchartered waters. Let's see how well he does this year going solo.
To get the festivities started I have been saving these Mahi Mahi Tacos for you. While this fish certainly is not native to northern Minnesota lakes, it's a tasty start to your spring grilling. The only thing missing is an ice-cold beer. 
Mahi Mahi Grilled Fish Tacos with Cabbage Slaw and Toppings
Recipe serves 2-3 with 1 large Mahi Mahi fillet
Ingredients: 
  • 1 large Mahi Mahi fillet or Walleye fillet 
  • 1 small package of coleslaw mix (combination of red and green cabbage with carrots or shredded lettuce  
  • Sliced avocadoes and chopped tomatoes
  • Diced cucumbers
  • Diced red onions
  • Favorite salsa
  • Sour cream or yogurt
  • Fresh lime juice
Honey Lime Glaze Ingredients:
  • 2 tablespoons lime juice, 2 tablespoons olive oil, 1 tablespoon rice wine vinegar, 1 tablespoon honey, salt and pepper to taste 
Directions:
  • Add the lime juice, vinegar, and honey to a bowl. While whisking slowly add the olive oil. Throw in a pinch of sea salt and pepper to balance the flavor. Brush glaze on the Mahi Mahi last few minutes of grilling time. 
  • Let fish rest 5 minutes and dice.
Taco Assembly:
  • Warm 6-inch corn or flour tortillas. 
  • Place cabbage slaw mixture on the bottom of the tortilla.
  • Divide Mahi Mahi chunks among the tortillas, add a squeeze of lime over fish.
  • Add sliced avocados, onions, cucumbers, tomatoes, salsa.
  • Top with sour cream or plain yogurt.
