I Spy Blackberries

I am sorry to say that Peter was not very well during the evening.
His mother put him to bed, and made some camomile tea; and she gave a dose of it to Peter!
'One table-spoon to be taken at bed-time.'
But Flopsy, Mopsy, and Cotton-tail had bread and milk and blackberries for supper.

Blackberries and raspberries have more in common than the space they share on a grocery 

shelf. Both grow on bushes and are great for your heart being high in antioxidants.

Since I do not have a blackberry source out in the wild like Peter and his 

family I purchased blackberries at the store for this recipe. 

As with most recipes there are options. First photo shows Triple Berry Cobbler baked in  

oven proof bowls (ramekins) using 3 cups of mixed berries;raspberries, blackberries and 

strawberries. The second photo shows the recipe baked in an 8  x 8 glass pan.  















Triple Berry Cobbler 
Cook's notes: If making blackberry cobbler use 4 cups of blackberries. 
Ingredients:
  • 1 cup of flour
  • 1/2 cup sugar
  • 1-1/2 tsp. baking powder
  • 1/2 cup milk
  • 1/4 cup butter softened
  • 1/4 cup packed brown sugar
  • 2 -1/2 TB. cornstarch
  • 1/2 cup cold water (substitute apple or raspberry or cherry juice instead of water for more flavor)
  • 4 cups mixed berries ( raspberries, blackberries, strawberries)
  • 1 TB. butter
  • 1 TB. lemon juice
  • 2 TB. coarse sugar
  • 1 tsp. cinnamon (divide)
  • dash nutmeg
Directions:
  • In a Cuisinart add flour, 1/2 cup sugar, 1/2 tsp cinnamon and baking powder, mix till coarse crumbs
  • Add in milk and 1/4 cup butter, mix and set aside
  • For filling in a saucepan stir together brown sugar and cornstarch
  • Add in water (or juice) fruit  
  • Cook and stir over medium heat till thick and bubbly
  • Add in 1 TB butter and lemon juice blend well
  • Pour into an ungreased casserole dish or 8 x 8 glass pan
  • Spoon topping mounds evenly over filling
  • Mix 2 TB. coarse sugar and 1/2 tsp. cinnamon together 
  • Sprinkle over topping
  • Bake at 350 for 35 minutes or until topping is crusty and hard
