Just One More Cookie-Please!

Cranberry, Pistachio and White Chocolate Chip Oatmeal Cookies

Cook's notes: Cranberry, Pistachio and White Chocolate Chip Oatmeal Cookies was the perfect recipe to try. The cookie edges baked nice and crispy. It was full of flavor and a great texture with chewy cranberries , crunchy pistachios and creamy white chocolate chips. It's the perfect holiday cookie. The recipe was adapted and makes two dozen cookies. 
Ingredients:
  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup white sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1- 1/4 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. Saigon cinnamon
  • 1/2 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup dried pistachios (shelled) 
  • 1/2 cup white chocolate chips or chunks

Directions:
  • Cream the butter and sugar in a bowl.
  • Beat in the egg and vanilla extract and mix until batter is light and fluffy. 
  • Mix the flour, baking soda and salt in another bowl.
  • Fold the dry ingredients into the wet and beat ingredients until well combined. 
  • Fold in rolled oats, cranberries, pistachios and white chocolate.
  • Chill dough in refrigerator 45 minutes. 
  • Preheat oven 350 degrees and line a rimmed baking sheet with parchment paper. 
  • Keep hands floured and make 1-1/2 inch dough balls. 
  • Bake cookies 10 minutes and cool slightly and remove to a wire rack.

In October I posted about an upcoming food writing opportunity I had for a magazine called Girlfriends, their 2016 holiday issue.

It is a regional lifestyle magazine that focuses on women. Girlfriends connects local women in a genuine way, sharing their challenges and stories that celebrate the diversity and strength of women in the region and touching on all aspects of a woman’s life. 
Girlfriends is available free at many businesses in the Virginia, Chisholm, Hibbing and Grand Rapids areas in Minnesota and also available at the Adams Publishing Group newspapers on the Range — Mesabi Daily News, Hibbing Daily Tribune, Chisholm Tribune Press and Grand Rapids Herald-Review and Pilot Independent in Walker.  
It was quite gratifying to see all eight of my recipes in print with photos spread out over 4 pages. I posted a photo of the first page. Below are links to the holiday appetizer and dessert recipes. previously posted. 

But WAIT! there's more with the most amazing coincidence. As I read through the magazine I noted another article penned by woman on staff for the Mesabi News with a very familiar name. After checking on the name and some other details (I called her mother to verify) indeed this was the very same young woman who I taught in second grade in Roseville, MN many, many years ago. 
Now I ask what are the chances both us being featured in the same magazine!

    And how amazing that a former student is also published in the same issue. It's a small world.
