Pesto Ravioli with Chicken and Veggies

Pesto Ravioli with Chicken and Veggies
A weeknight meal with super easy preparation all made in one skillet!
Use a prepared pesto for even easier preparation. Start out using pesto sparingly with 2-1/2 tablespoons and work your way up depending on preference. Prep all ingredients ahead  to make assembly go faster. 
Recipe serves 4 and was adapted from thegirlwhoateeverything 
Ingredients: 
  • 2 tablespoons olive oil, divided
  • 3/4 lb. chicken, cubed into small bites
  • 2 large garlic cloves, minced
  • 1 cup mini sweet red and yellow peppers, diced
  • 1 cup halved zucchini
  • 3/4 cup  sweet onions, diced 
  • 1- 9 ounce package refrigerated three cheeses ravioli 
  • 1 cup chicken broth
  • 2-1/2 tablespoons prepared pesto
  • 1 cup diced Roma tomatoes
  • Grated Parmesan Cheese 
  • 1/3 cup toasted walnuts
Directions:
  • Line a large dinner plate with paper towels. 
  • Toast walnuts in oven for 4 minutes at 350 degrees. Set aside.
  • Heat 1 tablespoon oil and stir fry chicken 5-6 minutes on medium low heat. Add in garlic and cook 2 minutes more. 
  • Remove chicken from heat and place on paper towel lined plate. Wipe skillet clean. 
  • Heat remaining olive oil and stir- fry peppers, onions and zucchini until crisp tender. Add to plate with chicken and garlic.
  • Wipe skillet clean. Add in broth and cook ravioli 4 minutes until al dente. 
  • Add in cooked chicken, veggies and pesto to coat. Add in tomatoes and heat for 3 minutes more uncovered.
Grate ravioli dish with Parmesan cheese and top with toasted walnuts to serve. 
Marauders
We should have not made the risky move to put out the garbage the night before early morning garbage collection. Just as the sun came up a neighbor walking by rapped on our window, looking concerned pointing toward  the street. Oh my, what a mess it was. Our very large garbage can filled with two weeks worth strewn everywhere. And it looked like it had snowed with a large box of baking soda coating the street.  We knew in an instant the javelinas had made their presence known.
To add more to the messiness they managed to do some heavy duty snacking on cactus plants in the front yard. They like to eat the inside buds.
Many of the barrel cactuses were wiped clean.
