Greek Chicken Gyros

 

Greek Chicken Gyros-a winning combination of juicy Greek lemon chicken, creamy cucumber dill yogurt dressing substituting for traditional Tzatziki sauce, fresh crisp veggies wrapped in a low carb flatout substituting for pita bread.  The tasty Greek lemon chicken marinade plays a starring role. It's packed with  spices that make this marinade shine. Recipe serves 4 but can easily be adapted to 2 by just cutting the recipe in half.

Ingredients: 

  • 1 package of Flatouts Multigrain

  • 1 container Greek Yogurt Dip 
  • 1-lb. chicken or 3 large chicken breasts cut in thirds 
  • 1/3 cup olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons high quality white balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon each cumin. dried basil, onion powder, sugar
  • 1/2 teaspoon each pepper, paprika, salt
  • 1/4 red onion thinly sliced about 1 cup
Toppings: 
Diced cucumbers, Roma tomatoes, chopped romaine, crumbled feta 

Directions:
  • In a large bowl add olive oil, cloves, vinegar, lemon juice and all spices. Whisk to blend. 
  • Saturate chicken pieces in the marinade. Cover bowl with plastic wrap and refrigerate for 1-2 hours. Turn meat a few times. 
  • Drain meat and barbecue chicken with red onions or bake in oven with onions covered with foil at 325 degrees 30-40 minutes. Cut meat into bite sized pieces.
  • On one side of flatout start with lettuce and then build up with chicken, veggies, yogurt dressing and feta. Roll and serve.
