Skinny Avocado Ranch DIp

 

MY WORD FOR 2021
It's taken me 12 days into the new year to finally arrive at word that best describes my mantra, POSSIBILITIES. Emily Dickenson's line "I dwell in possibilities." has always been one of my favorites. 
Even cooking brings on all sorts of possibilities (options) to choose from.  Take for instance this lightened guacamole dip. With a few added ingredients and a change of some standard ingredients the new recipe becomes Avocado Ranch Dip. 
A dip perfect for a late afternoon snack and/or a small gathering as an appetizer tray. The recipe serves 4 and was adapted from twopeasandtheirpod.com 
A real bonus for me was finding these smashed avocado pods in the produce department. Four pods come in this mesh bag. Each one is pure avocado puree and equivalent to one large avocado. There are so many possibities for this avocado smash. Spread it on a hamburger, over toast and crackers and on and on.  Check out this link with some 35 ideas to use avocado smash besides on toast. 
Avocado Ranch Dip
Ingredients:
  • 2 large avocados, pitted or 2 smashed pods as show in photo
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon dried parsley flakes or 1/4 cup fresh chopped parsley
  • 1/2 teaspoon dried dill or 1/4 cup fresh chopped dill
  • 1 teaspoon dried chives or 2 tablespoons fresh chopped chives 
  • 3 garlic cloves minced 
  • 1 tablespoon lemon juice
  • 2 tablespoons diced red onion
  • Salt and pepper to taste
Directions:
  • Use a whisk and blend until smooth. 
  • Refrigerate 1 hour and serve with your favorite veggie tray. 
It was all so good that it didn't take long to see the bottom of the bowl.

  1. Since I really like guacamole, this sounds like a must try recipe. Oh, the possibilities. Great focus word for 2021.

  3. OOo, I dwell in possibilities, I like that! That avocado smash looks like a great product, taking all the guesswork out of if an avocado is ready or not!
