KICK-OFF YOUR OCTOBER WITH A GHOULISH TREAT
CHOCOLATE ESPRESSO COOKIES
Love chocolate and coffee? Then this cookie duo is perfect for you. Because the cookies contain so little flour, they have a brownie-like texture. The recipe makes 2 dozen cookies. The recipe requires some preplanning to go to Michaels or to a similar store and buy eyeball candy decorations. There's plenty in this assortment to last a few holiday years of baking.
The batter is quite soft so important to chill in the freezer for 20 minutes and keep the batter chilled in between baking.
- Ingredients:
- 6 tablespoons of flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 4 oz. good quality e.g, Ghirardelli each bittersweet and semi-sweet chocolate, chopped
- 1 stick (1/2 cup) butter
- 2 large eggs
- 2 teaspoon instant espresso powder
- 2-1/4 teaspoons vanilla extract
- Halloween/Autumn sprinkles and assorted eyeball decorations
- Mix flour, salt, and baking powder with a whisk and set aside.
- On low heat break up baking chocolate into pieces and melt until smooth.
- Remove from heat. beat eggs, sugar, espresso powder, and vanilla in a medium bowl until well blended. Stir melted chocolate mixture into egg mixture. Stir in flour mixture, mix all until smooth.
- Place batter bowl in the freezer for 25 minutes.
- Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.
- Spoon heaping tablespoons of dough onto a baking sheet. Place dough spoonful about 2 inches apart. Sprinkle each dough mound generously with Halloween sprinkles.
- Bake cookies for 10 minutes. Remove baking sheet to cool about 5 minutes. Work quickly and press 5-6 candies into each cookie. Then transfer cookies to a wire rack to cool,
