with Egg Bites-the possibilities are endless and similar to mini quiches. They are high in protein and easily customizable by stirring in your favorite ingredients. You can bake a batch when you have time, chill them and then reheat them in the microwave. Use any half-pint oven-safe vessel. Wide mouth jars are easily available. Spinach Bacon Bites
The recipe makes 2 servings, but can easily be increased and was adapted from BHG June 2022. Ingredients:
- 8 eggs
- 3 tablespoons half and half
- 1/4 cup roasted red pepper, diced
- A few torn spinach leaves
- 2 cooked pieces of bacon, diced
- 1 tablespoon sweet onion, diced
- 1 teaspoon Elote seasoning
- 1/4 teaspoon parsley flakes
- 1/4 cup shredded yellow or white cheddar cheese
- Preheat the oven to 325 degrees.
- Lightly grease jars.
- In a blender add half and half, eggs, and spices. Mix well and stir in onion, spinach, bacon, peppers, and cheese.
- Divide the mixture between two jars.
- Fill a 9 x 9 pan with hot water and set jars in the pan. Make sure water reaches halfway up the sides of the jar.
- Bake 40 minutes or until eggs are set.
