Veggie Pasta Salad
Cook's Notes: A salad with lots of possibilities. Be creative and use available fresh veggies. While some collect Tupperware containers I seem to collect jars of various sizes. This pint container was perfect for individual servings. I added a homemade strawberry muffin (recipe previously posted https://sockfairies.blogspot.com/2022/05/strawberry-muffins.html )
The recipe serves 4 but ingredients can easily be increased just double the dressing.
Ingredients:
- 3 cups cooked al dente corkscrew or rotini pasta
- 1 cup each diced broccoli, grape tomatoes, carrots, sugar snap peas or green beans, radishes and mini peppers
- 3/4 cup diced red onion
- 1 cup halved black olives
- 1 cup mozzarella pearls (found in deli section)
Directions:
- Mix ingredients in a large bowl and add in dressing setting aside 1/4 cup. Refrigerate several hours and add more dressing right before serving.
White Balsamic Dressing
Ingredients:
- 1/4 cup good quality white balsamic dressing
- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- 1 large garlic clove minced
- 1-2 tablespoons honey
- Salt and cracked pepper
