One Pan Bacon, Asparagus, and Egg Breakfast
Ingredients
- 6 slices bacon, sliced
- 10 to 12 asparagus stalks, woody ends snapped off and discarded
- 2 large eggs
- Salt and pepper
- 1 teaspoon butter
Directions:
- Cook bacon in a non-stick pan until crispy. Remove with a slotted spoon and set aside on a paper towel-lined plate.
- Drain off all but 1 tablespoon of grease from the skillet.
- Stir fry the asparagus in the bacon grease until crisp-tender, about 4 to 5 minutes.
- Remove and set asparagus aside on a paper towel-lined plate. Cover to keep warm.
- Wipe the pan clean and melt 1 teaspoon of butter in a skillet. Crack the eggs in the skillet one egg on either side. Turn the heat down to low, cover, and cook until the egg whites are set. Season with salt and pepper.
- Add cooked bacon and asparagus back into the skillet to serve.
