Ultimate Brioche Breakfast Sandwich

 

The recipe was advertised as the Ultimate Brioche Breakfast Sandwich by blogger #2 Pencil.

Indeed it did deliver on the taste and presentation. It was perfect for a Sunday Brunch. I scaled back on the size of the brioche buns to accommodate other foods being served. But you certainly can go with regular size buns as shown here. 
The dessert served were Chocolate Mousse Cups from Costco found in their deli section. 

These breakfast sandwiches are best assembled and eaten immediately. The ingredients can be prepped ahead for faster assembly. 
The basic ingredients include
scrambled eggs, bacon, slices of avocado, and thin slices of white cheddar cheese 
The following recipe is for 4 small bun servings.
  • 4 eggs
  • 1/4 teaspoon each of elote or cumin seasoning 
  • 1/4 teaspoon dry mustard
  • 4 tablespoons of milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 6 slices of bacon-cooked crisp 
  • 1 avocado sliced
  • White or yellow cheddar cheese
  • 4 small brioche buns or 2 regular-size brioche buns
Directions:
  • Slice the avocado and set aside.
  • Slice cheese and set aside.
  • Cook bacon, drain on a paper towel, and set aside. 
  • Wipe pan free of grease. 
  • In a blender mix eggs, seasonings, milk, salt and pepper and blend to mix. 
  • Melt butter in the frying pan. Add in egg/milk mixture. Scramble the eggs. 
Assembling order
bun bottom, avocado slice, bacon, cheese, and 1/4 cup of scrambled eggs, bun top
