Shrimp, Tomato and Avocado Crostini

PART TWO OF TEST-TASTING RECIPES PLATED TWO WAYS

GARLIC SHRIMP AVOCADO TOMATO CROSTINI

Garlicky shrimp mixed with diced avocados and tomatoes make for a flavorful, yummy,  and colorful appetizer. Make these bites ahead of time. Simply toast your baguette and prepare the shrimp mixture right before serving!
Cook's Notes: The recipe calls for toasted baguette slices which make for smaller appetizers 8-10 slices. Another option is to bake frozen Garlic Texas Toast according to directions and then halve each piece before adding on the topping mixture. The recipe inspiration is from damndelicious.net
Ingredients:
  • 1 French baguette, ends trimmed and cut into 1/2-inch slices
  • 2 tablespoons butter
  • 3 cloves of garlic, minced
  • 1/3 cup of diced sweet onion
  • 1/2 cup of diced red pepper
  • 3 cups of small cooked shrimp, peeled, deveined and thawed
  • 2 cups cherry tomatoes, halved
  • 1 avocado, halved, peeled, seeded and diced
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon freshly squeezed lemon juice, or more, to taste
  • Kosher salt and freshly ground black pepper
  • Dash red pepper flakes
Directions:
  • Preheat the oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray.
  • Place the baguette slices in a single layer onto the prepared baking sheet. Place in oven and bake until lightly toasted, about 4 minutes a side. Set aside.
  • Melt butter in a large skillet over medium-high heat. Add garlic, onions, and peppers and sauté stirring frequently, until fragrant, about 2 minutes.
  • Add cooked thawed shrimp and sauté in the garlic butter mixture for about 2-3 minutes.
  • Stir in chopped tomatoes, avocado, parsley, a dash of red pepper flakes, and lemon juice. Salt and pepper to taste.
  • Top each baguette slice with shrimp mixture and serve immediately.
Leaving you with one of life's problems-have a good day!

  1. As we walked at the nature center yesterday, Randy kicked up leaves edging the trail. Just like a little kid. I loved it.
