Chicken Cheese Ravoli and Apples with Apple Cider Wine Sauce

I have found it to be such a versatile recipe.  I tweaked the original recipe a bit and used the same sauce to create a new dish called Chicken Cheese Ravioli and Apples with Apple Cider Wine Sauce 
This recipe starts with a sauce and then cheese ravioli (from Costco) is added in for the last few minutes of cooking time. The recipe serves 3-4.
Chicken with Cider and Apple Ingredients:
  • 1 container of Chicken Mozzarella Ravioli 
  • 1 tablespoon olive oil
  • 3/4 cup diced sweet onions
  • 3 minced garlic cloves 
  • 1 cup diced mini red and yellow peppers
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon cinnamon 
  • 1/2 teaspoon each of dried rosemary, parsley flakes and thyme
  • 1-1/2 cups apple cider
  • 1/2 cup chicken broth
  • 1 tablespoon each Dijon mustard and real maple syrup
  • 2 tablespoons cornstarch mixed with 1/4 water or heavy cream 
  • 2 whole apples like Honey Crisp, Pink Lady, or Gala, diced
  • Salt and pepper to taste 
  • 2 tablespoons dry white wine 
  • Parmesan cheese
  • 1/3 cup diced walnuts 
Directions:  
  • In a large skillet heat olive oil and saute diced sweet onions and mini peppers until soft. Add in garlic cloves, and spices, and saute 2 minutes longer.  
  • Add cider and broth to the same pan. Whisk in mustard, syrup, and cornstarch mixture. On medium-low heat (uncovered) add in chopped apples.
  • Cook uncovered for 25 minutes until thickened and apples softened. 
  • Add frozen ravioli and cook for 6 minutes uncovered. Add in wine and cook for 1 minute more. 
  • Grate Parmesan cheese over each serving and sprinkle with walnuts.
