Sausage Egg Breakfast Grinders

Sausage Egg Breakfast Grinders are protein-rich, energizing, and delicious. They are packed with scrambled eggs, sausage, cheese, and onion, making them ideal for staying fueled all morning.

These are breakfast sandwiches, but honestly, there’s no reason why you can’t have them for lunch or dinner - especially if you are a light morning eater. They are substantial and will keep you energized for hours. On top of that, they are super tasty and easy to put together.

Why are these sandwiches so good? Fluffy scrambled eggs with sausage, tomatoes, and onions are tasty and filling. Cheese provides melty, gooey goodness, while caramelized onion imparts a slight sweetness. Of course, the sub rolls are pure carb satisfaction!

Cook's Notes:  The recipe is adapted from In Good Flavor and serves four. 

Ingredients:
  • 4 breakfast sausage patties (I used Jimmy Dean turkey sausage patties), diced  or 1 cup diced sausages such as kiebasa
  • 6 large eggs
  • 1/3 cup milk
  • 1 cup from a package of shredded Mexican 4 cheeses
  • 2 tablespoons melted butter, divided
  • 3/4 cup diced small onions
  • 3/4 cup dicd mini red peppers
  • 3/4 cup diced cherry tomatoes
  • 2 tablespoons butter, melted
  • Optional salt and pepper to taste 
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon Elote seasoning
  • Sprinkles of sesame seeds
  • 4 sub or brat buns 
  • Chip and salsa 
Directions:
  •  Line a baking sheet with parchment paper and preheat the oven to 350 degrees. 
  • In a medium-sized fry pan, melt 1 tablespoon of butter. Sauté sausage, peppers, and onions.
  • Dice tomatoes and drain on a paper towel-lined plate. 
  • In a blender, add spices, milk, and eggs. Mix well. 
  • In the fry pan, melt the rest of the butter and add sausages, tomatoes, cheese, onions, peppers, and egg milk mixture. Cook just until set.
  • Divide mixtures among 5 buns. Brush the remaining melted butter onto the buns, then sprinkle the tops with sesame seeds. 
  • Bake for 8 minutes or until the cheese melts.
  • Serve with chips and salsa.
