One Pot Cheesy Taco Skillet


What do you get when you mix Taco Thursday with a one pot low carb meal? 
You get a one pot cheesy taco skillet meal.   
It's an easy delicious veggie packed meal affordable as well as a low carb diet. 
And the fact you use only one pot makes it even better. 
Cheesy Taco Skillet Meal 
Cook's Notes: Recipe adapted from sweetscdesigns.com 
Ingredients:
  • 1 lb. ground beef (80% lean)
  • 1 cup each sweet onions and a combination of mini red and yellow peppers, diced
  • 1-12 oz. can Rotel diced tomatoes with green chilles
  • 1 large zucchini, diced
  • 2 cups frozen kale/spinach mixture
  • 1 package (8 oz.) taco cooking sauce 


  • 1/2 cup salsa
  • 2 cups shredded Mexican cheeses
Directions:
  • In a large skillet with deep sides, brown ground beef with onions and peppers.
  • Drain and wipe pan clean. 
  • Add meat mixture back into pan. Stir in diced zucchini, frozen spinach/kale, canned tomatoes, taco cooking sauce and salsa. Mix well.
  • Bring to a boil on a medium heat, reduce to a simmer and add cheese. Cook on simmer uncovered for 45 minutes.     
Serve Cheesy Taco Skillet Meal over a bed of lettuce to keep it as a low carb meal, otherwise serve with flour tortillas, a burrito bowl or rice.
