It's an easy delicious veggie packed meal affordable as well as a low carb diet.
And the fact you use only one pot makes it even better.
Cheesy Taco Skillet Meal

Ingredients:
- 1 lb. ground beef (80% lean)
- 1 cup each sweet onions and a combination of mini red and yellow peppers, diced
- 1-12 oz. can Rotel diced tomatoes with green chilles
- 1 large zucchini, diced
- 2 cups frozen kale/spinach mixture
- 1 package (8 oz.) taco cooking sauce
- 1/2 cup salsa
- 2 cups shredded Mexican cheeses
- In a large skillet with deep sides, brown ground beef with onions and peppers.
- Drain and wipe pan clean.
- Add meat mixture back into pan. Stir in diced zucchini, frozen spinach/kale, canned tomatoes, taco cooking sauce and salsa. Mix well.
- Bring to a boil on a medium heat, reduce to a simmer and add cheese. Cook on simmer uncovered for 45 minutes.
