Spring Chalk Thoughts

Inspiration for this impromptu poem (work in progress) came after a coffer run to a local shop.

I stood before a board
wondering what to write.
Did I have a favorite 
you'd want to hear about.

 The board was filled
with random thoughts in chalk
about those spring activities
wished for all  winter long.

Ride a bike
dig in the dirt
paddle a lake
paint a picture
eat outside
and maybe 
even puddle jump.

I guess I'll write...
find spring scenes 
that add some color to my life.


Lucky me
 did not stray too far.
found these scenes  
right outside my door.

Spring Salad

Serves: 6
Ingredients:
·                                 1 plastic container (5 oz) mixed baby greens or package mixed greens (5.5 oz.)
·                                 1 pint fresh strawberries, washed, hulled, and sliced
·                                 avocado slices
·                                 2 oranges, peeled and sliced or 1 can Mandarin oranges drained and sliced in half
·                                 1 bottled dressing some suggestions include:
·                                 Ken’s Lite Steak House Raspberry Walnut Vinaigrette or Raspberry Pecan
·                                 or  Teresas Blackberry Poppyseed or Simple Dressed Pomegranate
·                                 1/2 small red onion, chopped in rings
·                                 1/2 cup crumbled blue cheese
·                                 Fresh Gourmet Glazed Walnuts or Honey Roasted Almond Accents
·                                 (package selections are found in produce department)
Directions:
In a large salad bowl, combine baby greens, onions, strawberries, and oranges
Use dressing sparingly just moisten greens
Sprinkle with blue cheese, nuts and serve.
