On a Roll with a Cranberry Blitz

Cranberry Apple  Salad
Cook's Notes: Crisp apples, dried cranberries, feta cheese, and hearty walnuts come together in a fresh Autumn salad. An easy side dish for any favorite meal!
I 'm including two dressings. It was hard to choose because I liked them both. Apple Cider Vinaigrette is a thinner dressing and Creamy Apple Cider Vinaigrette has a thicker consistency.
Salad and dressing recipe can easily be doubled or tripled for a larger group.
Recipe from adapted from lecremedelacrumb.com and serves 4.
Ingredients:

  • 6 cups salad (I used a combination of arugula and baby spinach but any spring green mix will do)
  • 1 red apple
  • 1 green apple
  • 1 cup walnuts, roughly chopped
  • 1/3 cup crumbled feta cheese
  • 1/2 cup dried cranberries or Pomegranate arils (pom poms)
Apple Cider Vinaigrette:
Ingredients:
  • 1/2 cup apple juice
  • 2 TB. apple cider vinegar (or white vinegar in a pinch)
  • 1 TB. honey
  • 1 tsp. Dijon mustard
  • scant ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 TB. olive oil or Lemon Olive Oil
Directions:
  • Add all dressing ingredients in a blender to mix well. Refrigerate for several hours before serving.
  • Core and chop apples (thin slices or 1 inch chunks). Toss lettuce, apples, walnuts, feta, and cranberries together in a large bowl.
  • Drizzle with vinaigrette. 
Creamy Apple Cider Vinaigrette  
Ingredients:
  • 1/4 cup finely diced apple with peel on
  • 2 TB.white balsamic vinegar, Cranberry Pear Balsamic or Pomegranate Quince Balsamic
  • 1/4 cup olive oil 
  • 1 TB. garlic clove, diced
  • 1-1/2 tsp. Dijon mustard
  • 1-1/2 tsp. honey
  • 1-1/2 tsp.fresh lemon juice
  • Salt and pepper to taste
Directions:
  • Place all ingredients in a blender and process until smooth. Cover and refrigerate a few hours before serving. Shake to blend again before using.
