Just that Kind of Day


April Rain Song

Let the rain kiss you.

Let the rain beat upon your head

with silver liquid drops.

Let the rain sing you a lullaby.

The rain makes still pools

on the sidewalk.

The rain makes running pools

in the gutter.

The rain plays a little sleep-song

on our roof at night.

And I love the rain.

Cook's notes: It was just that kind of day that makes you want to hunker inside far away from the drizzling cold outside. A festive meal can definitely brighten the day. This salmon dish is super easy and flavorful chockfull of heart-healthy protein, vitamin A and omega-3 fatty acids!
The recipe was adapted from a copycat Ruby Tuesday restaurant recipe. The salmon was served over rice with steamed broccoli. 
 Copycat recipe: Ruby Tuesday Asian Glazed Salmon
Ingredients:
  • 1/2 C. brown sugar
  • 1/3 C. soy sauce
  • 2 TB. hoisin sauce
  • 1 TB.. fresh ginger, chopped finely
  • 1/2 tsp. dried red pepper flakes
  • 1/2 tsp. garlic powder
  • 1 TB. fresh lime juice
  • 1 TB. fresh orange juice
  • 2 TB. sesame seeds
  • 4 salmon fillets
  • green onions

Directions:
  • Preheat oven to 350 degrees. Combine the marinade ingredients in a saucepan, and heat until bubbly. Stir several times. Reserve 3 tablespoons. 
  • Grease a baking dish and pour marinade over salmon fillets. Bake for 15 minutes or until salmon flakes with a fork.
  • Turn oven to broil. Spoon reserved sauce over fillets and broil for 1-2 minutes.
  • Sprinkle with chopped green onions.
