Cranberry White Chocolate Cookies with Pistachos

Cranberry White Chocolate Cookies with Pistachios

Ingredients:
  • 2 sticks of softened butter 
  • 2 cups of sugar 
  • 2 eggs 
  • 2 tsp. vanilla 
  • 2-1/4 cups flour 
  • 1 tsp. baking soda 
  • 1/2 tsp. salt 
  • 2 cups white chocolate chips 
  • 1 cup dried cranberries or cherries 
  • 1 cup chopped pistachios or walnuts 
Directions:
  • Line a cookie sheet with parchment paper. 
  • Beat butter and sugar until creamy and fluffy. 
  • Add in eggs and vanilla, beat until smooth. 
  • In a separate bowl sift flour, salt and baking soda together. 
  • Beat flour mixture into egg mixture, stir in chips, cranberries/cherries and nuts. 
  • Chill dough in refrigerator for one hour. 
  • Preheat oven to 375 degrees. 
  • Drop dough by round tablespoon on cookie sheet. Flour hands and roll each tablespoon of dough into a ball. Bake 10-11 minutes. 
  • Cool cookies on wire rack.
